Bread crumbs around calamari? Not in any restaurant I've been to. The best way is very light coating of seasoned flour, then a dip in the buttermilk/egg coating that's about the consistency of ranch dressing, not too thick so when it fries it gets a nice thin golden layer on the outside.

For seasoning i use an American product all “Original Everglades”. Love the flavour and it can be used on literally anything
