    One of my favorite cooking shows on TH-cam is Chef Jean Pierre. He agrees that you use what you have. If the recipe calls for shallots and all you have is onion, use the onion and move on. If you don’t like mushrooms, don’t put it in. “It’s not rocket science, it’s just cooking” it’s supposed to be fun! What would Jazz be without improv? When you make something you make it your own.

      We are soon moving onto our small bus conversion motorhome full time so have to work out just what I absolutely have to have. I am a bit of a clean/neat freak, so we will see how we go. My hubby isn't any of that😂 so never a dull moment

    I'll comment on the unrefrigerated eggs. I grew up on an egg farm; on the farm, eggs were NOT refrigerated until they were washed. Naturally, eggs have a membrane that seals the shells from air getting into them. The washing makes them look better and allows air to penetrate the porous shell. That's why you and tell how old an egg is when it is hard-boiled by how large the air gap is. Fresh eggs have almost no air whereas older eggs can have quite large air bubble, usually on 1 end.

      I only eat fresh eggs, never refrigerated. Much better taste. Perfectly safe as long as you're not trying to make an egg last a month. But there fresh, so why wouldn't you eat them fresh.

      In Ireland I had a biology teacher that every year talked about how refrigerating eggs is more dangerous, and can cause any possible salmonella on the outside of the shell pass through into the egg. So as part of the lecture, he would ask students to bring in the egg holder that often came in fridges, and he would destroy them in various ways.

      In Germany, eggs are NOT washed. You sometimes even have a feather in the box. Since the protective coat is still intact they don't need to be kept cold but you have to refrigerate them after a certain amount of days, if you don't consume them. And it says on the box :-) Americans kind of "damage" their eggs through washing and therefore have to keep them refrigerated at all times.

    OK, I love your channel but this was one of the best food Vlogs that I’ve seen in a long time. The honesty and what you were doing especially not re-baking the walnuts so they came out perfect was exactly what should be seen. Great job on the video and we love seeing you guys every week.

    Thank you both for such a wonderful video this morning. Learning how you use the utensils you have and the food that you can get on hand is fantastic. Yes she may have to adopt adapt some recipes but it’s a nice adventure. I really enjoyed this episode of your cooking.     The frothy heart is the easiest. Just pour a contrast color liquid in center (round shape) and take a stirring stick from top to bottom through the entire round contrast. You can’t mess it up. Takes 2 seconds and Nikki deserves it 😊

    My grandpa used to say whenever something got a little to dark in the oven: “A little charcoal is good for the stomach.” And his mother, my great-grandma, whenever the esthetics got a little messed up or wonky, used to say: “But the taste is good.”
    Regarding the oven, I have found that convection ovens---even when used in conventional mode---put out more hot air and heat into the “environment” than pure conventional [radiant] ovens. The biggest advantage of a small portable oven is, that you can put it wherever it is most convenient from a heat management point-of-view.

    Hey! Here's a suggestion which will cut down the galley heat by 100%, and make cleanup a breeze too. Buy an Airfryer. I suggest the Ninja Dual Zone. I haven't used my oven for 3 years!
    The Airfryer; Airfries, bakes, roasts, broils, dehydrates, and reheats food to perfection. In effect, it is a perfect small oven. It bakes in 1/2 the time, so you can make a batch, pull it out and make more immediately. To make your muffins, you can cut your pans down to make sets of two muffins and just drop them in the Ninja and bake. In a few minutes, you will have perfect hot muffins.
    325f degrees on Bake for 20 min. I JUST made your banana muffins a minuite ago. The Ninja will fit neatly on the cupboard or countertop. Happy Baking! 😁😈

    This is a sailing channel, I’m a sailor and your new boat is beautiful but I really really LOVE watching Niki in the galley!!! She’s so good at it plus her emphasis on nutrition is a plus. Thank you. I’ve always enjoyed watching her cook…and swimming with whales. She does it all! ❤

    My little baking hack when making muffins - I use a 1/3 measuring cup to scoop the batter into the muffin cups. Works awesome. So therefore you don't need a ice cream scoop.

    Very impressive (from an avid home cook). You're doing some good stuff there in slightly tricky conditions / space / equipment. Also good to see your oven in Celsius; 240V and Centigrade, joining the rest of the world !. I've just switched to an Anova precision oven (small enough) and it has been a game changer. Big fan of your muffin tray (I hate cleaning them usually !)

    Nice change of pace. Small tip re. eggs. It's a one-way path - either keep them unrefrigerated or refrigerated, but don't move them from a colder environment to a warmer one (room temperature) for too long. Moving from cold to warm can result in condensation forming on the egg, which may remove the bloom and allow for bacteria to enter the egg. A similar mechanism occurs if you wash or wet the eggs first (which local farmers might not do)...if washed, don't leave them out too long (

    One trick that I learned from others about the best way to keep eggs fresher longer, around 6 to 8 months is rub oil all over the egg shell to stop air from seaping through the egg shell pours. I was told i could use corn oil, veg oil and I'm sure any other food type oils. Then put eggs into a dark cool cabinet and they will last between 6 to 8 months or longer. Old country way when your chickens dont lay enough eggs in the freezing winter, plus in old days they needed a better way of keeping eggs longer during the hot summer heat from making them go bad 150 years ago. So someone came up with this idea soaking eggs in veg oil and they had eggs all year around even when they didn't have a food cellar. I love your channel. Thank you both.

    I loved this video! Especially learning about nut milks. I love coffee and I have to have cream. I may have to try your recipe for that cashew milk. My new love is cold brew coffee. Made in a lg mason jar and metal fine filter. Love it! I always enjoyed watching you cook on curiosity 1, so this was awesome in your new galley. You two are amazing, I love watching you.     The best creamer we have ever made plant based is with the NUTR... It is only one gadget (saves on space) and makes whatever nut you want into frothy or normal creaminess...

    Cashew milk is my favourite plant based milk and tastes so great even in tea :)
    Soaking your cashews helps reduce the physic acid content, promoting better absorption of minerals such as zinc, magnesium and calcium.
    Enhanced digestibility, Nutrient activation, Reduced phytic acid content, improved texture and flavour, enzyme activation, texture in some dishes is better and smoother,
    Just a few good reasons to make the effort to soak over night to get more of those amazing benefits out of the cashews :)

      Roasting nuts reduces their antioxidant content (like Phytic Acid aka inositol hexaphosphate aka IP6), as does soaking. But, probably not by a high enough percentage to have a large impact (a statistical impact, yes, but likely not a biological one).
      I’d only worry about Phytic Acid content in my food if I had digestive problems, with their concurrent/inherent nutritional deficiencies.
      And we’re starting to see links between IP6 (Phytic Acid) intake and anticancer activity … such as improved chemotherapy outcomes, and reduced metastatic events.
      So I say soak if you wish (they do blend easier), or not, as your schedule guides.

    I used to make my own cashew milk (that I soaked overnight first) , but now my personal favorite is Pistachio milk! Great in coffee but also great for drinking while enjoying a homemade cookie treat! (I use the Nutr machine - so you don't have to use a nut bag!) Really enjoyed this episode! ☕

    24:09 In warm climates, I typically turn off the oven approx. 5-7 min. B4 my baked goods are done… less “heat”, works great! 😊

    Nido is a great powered milk.. and if mixed with milo.. you have some good chocalte milk. I grew up with powered milk mixed with can condenesed milk. 2 items during my travels around the world when i was in the us navy was every where. Plus goat milk, sheep milk, and there are a ton of other milk out there. Only washed and pastuized eggs need to be in the fridge.. Farm fresh eggs are fine until cleaned. Only Clean them where you are ready to use them.

    Nikki, a SALUTE to your grandmother's wisdom well-conveyed towards "recipe resiliency." Soooo many during COVID-19 discovering store shelves EMPTY of their usual food preferences I remember counseling to broaden their palate, with their diet balanced more to vegetables/plant-based, and fish -- fresh and local = better -- or do without. By the way, your oatmeal-nut muffins recipe as shown resembles my spiced oatmeal pancake recipe, both keen on generous cinnamon. Mine adds nutmeg, sometimes coconut flour, and allows the flour and oats to soak up water before pouring the batter to the griddle. ❤ Congrats, Jason on winning the dishwasher! 😅😅 Blessings, S/V "Windwalker"

    You need a smallish smart oven;
    bachelor tip.. "air friers" don't fry, they bake. I use my "air frier" to make fresh slice-sized pizza,
    local supermarket has small traditional Italian raw pizza, pre packaged in plastic ready to bake. Cut into quarters, the 'air frier' is the perfect tool
    to bake tiny stuff like raw pizza that's already cut into slices.
    ..it also does a mean strip steak, "air fried."
