  • Hey guys! I wanted to switch things up a bit and bring my true skills and talent to life. I will be showing you how to make 3 delicious Caribbean inspired meals. Tofu coconut curry, spicy red lentil curry with roasted pumpkin, and a “Rasta Pasta”. Hope you guys enjoy the video!! Recipes are down below. Peace and loveeeee.

    Recipes:
    Rasta Pasta
    1 pack noodles of choice ( I used spaghetti spinach noodles)
    1 block tofu
    1 ½ cup soaked cashews
    1cup water
    ½ tbsp liquid aminos
    1 tsp curry powder
    2 tsp salt
    2 tsp black pepper
    3-4 bay leaves
    2 tbsp jerk seasoning
    2 tbsp oil
    1 medium red pepper
    1 medium green pepper
    3-4 chile peppers
    ¼ cup chopped celery
    1 onion
    1 tbsp ginger
    3-4 cloves garlic
    Roasted Pumpkin and Lentil Curry
    2 cups red lentils
    2 cups pumpkin
    2 onions
    ¼ cup chopped celery
    Handful fresh basil
    2 tbsp ginger
    3-4 cloves garlic
    3 star anise
    5-6 cloves
    1 tsp cumin seeds
    1 tsp mustard seeds
    2 tsp salt
    1 tbsp curry powder
    2 tbsp tomato paste
    1 can coconut milk
    1 ½ cup water
    2 tbsp oil
    1 tbsp sesame oil
    Mint Chutney
    2 handfuls mint leaves
    1 clove garlic
    2 pieces ginger
    1 tsp salt
    1 tsp sugar
    1 tsp cumin
    juice of 1 lemon
    Tofu Coconut Curry
    1 block tofu
    1 large green pepper
    1 large red pepper
    ¼ cup celery
    ½ zucchini
    1 carrot
    6 ginger pieces
    4 cloves garlic
    1 can coconut milk
    1tbsp tomato paste
    1 tsp cumin seeds
    2 tsp salt
    1 tsp peper
    1 tsp mustard seeds
    1 tsp curry powder
    1 cinnamon stick
    1 tbsp soy sauce
    1 tbsp sesame oil
    2 tbsp oil

    This looks amazing. I love Coconut curry so I will definitely try this. I'm very hesitant cooking with lentils.. any tips? I just started a plant based channel and I love finding new recipes like your video shows, thank you!!

      Healthy Kelsey Yes you should definitely try! I mainly cook with red and brown lentils. With red lentils, they tend to soak up a lot of water so make sure you add enough water. I would say a 1:2 ratio. 1 cup of lentils to 2 cups of water. You can add them, to curry, soups, and any stew. I like to soak my brown lentils and cook them as well 1:2 ratio. They cook quickly. I usually have brown lentils with pastas, in salads, or in a soup. Hope this helps!
