Trial apprentice applicant here.
Every other video says that the lye and the fat should have temps 100-110. How does this method get around that premise?

Honestly in my experience it doesn’t really matter. I once soaped with my oils being 80° and my lye water 40°F. 😂 With the heat transfer method once everything is melted it ends up being around 110°.
