Hey Gerrit, MDF is a great option and cheaper than plywood, but a good plywood would be a very good option. I wouldn't use particle board anymore, I've tried it before!
I use both, when making a more complex shape I prefer using clamps, as you can see in this video th-cam.com/video/98To4hfqEik/w-d-xo.html But for the majority of them I find turn buckle to work great, and if needed I can always add clamps too.

MDF is terrible material plywood is much more stable
