Hmmm...maybe you've got a hot spot in your oven? I've got one that requires rotation halfway through, sometimes more, depending on what I'm cooking. Haven't made this yet myself, but do think I'll add a couple tablespoons of lupin or coconut flour, in hopes of a bread-ier texture. Playing around w/the eggs might alter results too, who knows~ lots of possibilities for sure.
