Loreseeker here. It has been confirmed by Riot that the interactions plus everything else in LoR that is related to the Lore is canon, so yeah, KatxGaren is a confirmed ship by Riot themselves.

When you are doing this sort of stuff... I recommend the LoR Zoe Interactions. You might be now like WAIT ZOE? And... yes shes not yet in the game, but the Targon Interactions got leaked alongside the Bilgewater ones. Zoe has some funny Quotes

Lor interactions are mostly memey jokey affair. The voice interactions for Champs in LoL are typically better written and leave open story hooks and tease fan theories you may Don't find on Universe. I recommend Mordekaiser.
