Ingredients for sponge fingers(手指饼):
3 large eggs - grade A (鸡蛋)
60g caster sugar (细砂糖)
80g plain flour(普通面粉)
10g corn flour (玉米粉)
Filling(芝士馅):
250g Mascarpone cheese (马士卡邦芝士)
2 egg yolks (蛋黄)
50g caster sugar (细砂糖)
2 tsp gelatine powder(鱼胶粉)
40ml water(水)
200g whipping cream (动物性鲜奶油)
1 tbsp Rum, optional (兰姆酒,随意)
Coffee syrup (咖啡糖浆):
150ml black coffee (黑咖啡)
2 tbsp coffee liqueur (咖啡酒)
1 tbsp rum (兰姆酒)
No talk... no music... just sound... clear and simple. Pure mediation.

请问为什么用 cold whipping cream 打不到stiff peak? 我的cream成品最后是水水的, sponge fingers 盖不到,浮在上面
Whipping cream刚从冰箱拿出来低温打发比较稳定,还有就是用手持搅拌器来打发的话最好绕着容器打发,就像打发蛋清那样。至于cream水水的,搅拌器的头是拿来打发蛋清的线头还是搅拌蛋糕面糊的片头,如果是线头的话会比较水,片头的话应该会比较硬一点。

剛一看到"動物性鮮奶油"時就想難道鮮奶油有動物性和植物性之分嗎?後來猛然想起台灣人把我們香港人說的牛油成為奶油,cream在香港叫做忌廉或者直接說英文,而台灣人稱為鮮奶油。個人覺得台灣對牛油和忌廉的叫法好奇怪,就好像牛油不是新鮮的,而且台灣叫法很容易把香港人和大陸人弄糊塗!
