Chef John, although I can't yet say that fish looks appetizing or appealing, I can definitely say the process of making it was most impressive. If I can ever work up the nerve to want to work with that thing (and I will try), I am positive it will be delicious.

It is wonderful to look elaborately cut. Why do you pour hot oil at the end?
Pouring hot oil on the green onion is to lightly cook it so that the fish could get more flavor and less fishy smell 😁

Also please make a website that has these recipes written out, it would be incredibly usefull and just as popular as your channel, if not more. It would also make these dishes seem less intimidating if they could read how to do it and not be overwhelmed by your skills. As awesome as your videos are, I get the sense that most viewers who watch your recipes might be scared away of trying to make it themselves if they can't do it the way you do.

I think the biggest thing everybody is forgetting is that fish have bones. Fish have heads. Fish have eyes. The appearance of a finished dish is a product of your environment. In some places in the world fish looks like this. You are served fish with bones at restaurants. But mostly here in America people freak out if you find anything like that on your plate. People have forgotten how food is made. That being said, I would be more than happy to try this dish. People need to understand that this is how meals used to be served and simply because you can get it cut up and portioned in plastic wrap doesn't mean that it exists that way in nature. It's just a testament to laziness.
