      Many Chinese recipes use tofu as just another ingredient. It is used to complement and extend meat dishes. It adds textural contrast and flavour. Only in temple cooking would you find it as a pure vegetarian dish. If you’re looking to substitute out meat you would use Gluten/Seitan

    To the best that I know about the 1st disk which is a Cantonese disk "咸魚雞粒豆腐煲"; (1) You need to use coarse salt instead of fine salt. (2) Use no oyster sauce

    The second dish is similar to Indonesian "batagor" (acronym of "bakso tahu goreng; literally meaning meatballs with fried tofu); fried tofu stuffed with meat, with the difference being the Indonesian batagor using a fish-based stuffing instead of pork and shrimp

      That is because the Chinese Immigrants brought the recipes to Indonesia. Batagor, baso tahu, siomay they are just variants of this. Actually lots of traditional Indonesian foods are from old Chinese recipes.

    Signs of a chef being great
    1) has to be fat/ plumpy/ at least belly ( never trust skinny chef ) 😛
    2) first name has to be John
    3) has to have left hand resting on his lower back while cooking in right hand

      Possibly enough salt and wine as preservatives...thats how salted fish is produced

    i think if you wanted to air dry that fish safely without bugs and flies getting on it making it go bad is to get a fruit dryer that way its protected from the outside and it dries faster too

      Mazen Agami Soft tofu has a texture similar to creme brûlée and firm tofu is somewhat like feta cheese. Tofu doesn’t really have a “taste” but if cooked right can be very delicious.

      Theres different types of tofu and preparations, the soft ones are like custard pudding, firmer ones are like paneer , also there's fried tofu pockets that are like a edible sponge

    at first when i saw the firm tofu i was like ok, then i saw the dumpling stuffing and i was like huh?...then i saw him fry the tofu and i was like chef what are you doing?....and then i realized fried tofu dumplings and my mind exploded....
