To detain someone, you need to carry their body after they have fallen down for any reason. Losing a fight is most common, but it could also be because you drank them under the table for example. Anyway, while still carrying them, operate the cage object and there should be an option for locking them up. You can also use this same method on beds to place someone down on a bed which is useful if you want to take someone to a doctor or to put them in a bed to heal them yourself.

As for getting martial arts xp, there are substats on gear that make this better just like with material Acquisition, but the real fast way to get it is to duel everyone at a sect because of how many people in one place there are. Close to this is fighting Special creatures(who eventually can be beaten rather easily by you). Frog, Slamander, and Dragon give quite a lot of martial Arts xp. Basic animals usually give an extremely small amount of XP, but its still worth fighting them for meat, bones, eggs, and hide. You need it for Weaving and Cooking. The Special creatures all drop very useful materials, especially the frogs early on. Meridian Shift pills are very useful.
Anyway, this grind also helps to level your attack skills, so its efficient as an activity to just run around killing things at least till you max your attack skills. But the Martial Arts XP is very valuable because you need to master a skill to inscribe or teach it. You can save 6 skill/Internal Kungfu from your last character, but thats really not enough. You could use money to buy all available manuals, but many skills you learn from random NPCs wont be available this way.
In summary, this game has a lot of grind. Luckily, you can skip grind on future characters with the lineage feature. Make sure to assign points to the stuff that is annoying to level if you want to keep your sanity.
Oof. That Wild grass is absolutely something you need. And a lot of it... Ramie, Wild Grass, Maple Bark.

You very specific question has teh answer: YES. more string equals more xp. Or more specifically, the XP is based on how many times you sue a particular move type. Damage taken gives XP for Iron Body, Every pal move gives XP for Palm, etc. More combos, means more XP. This stuff actually levels quite rapidly actually, and is therefore recommended you don't spend lineage points on it unless you have extras.
Also, Bionic Eagle is busted. Hearing your voice when you saw the damage made me smile. When you upgrade it, it gives that effect to EVERY move currently on the field instead of just a few, too. I just wish the animation looked cooler, tbh.
You'll want to cut trees for Maple bark and Aspen resin, and probably also for Peach Blossom. The Plum and Pinecones can be useful for leveling cooking., the Maple bark is used for weaving and medicine, and the aspen resin is also used in resin. The wood is the least useful resource, but obviously, not entirely worthless because of building. Wood is an ingredient for almost everything in crafting and early, you can use it for Blacksmithing training.
I would prioritize getting your gathering set though. It will make your life so much easier and cut your grind for materials by orders of magnitude.
Yeah this is pretty much what I did for next episode. I gathered enough Ramie for a kickstart on my farms and then went straight into crafting the rest of the gathering gear for the time inbetween.
Gathers me money and helps me fetching the mats for the craftings.
You can sell things to NPCs and they can use anything you can use. They have the same capability as you. Keep sparring with someone, and eventually they will get stronger. Give them good gear and they'll switch to use it. teach them skills and they'll use them.
As for property, stuff that is too close to a house when you sell it is linked to it. Stuff inside the house too, even if not part of its original design, like if you put an extra bed or a chest and filled it with stuff.
