Default Betaflight rates are pretty sensitive for a beginner if that's what you're using. Turning RC Rate way down is a good place to start. I also have a rates tuning video: th-cam.com/video/R8TvR1bY0bM/w-d-xo.html
There is not one "correct" answer for this since rates are largely personal preference. I am using the default rates in this series, which is 667 deg/s and is plenty.

Can we talk about expo on the sticks ? Every single quad I’ve put in acro just wants to go crazy as soon as I get off the ground
Figuring out your rates and doin some tuning will tame your quad. Get airborne with angle then switch to acro.
