Love the question! Typically people use natural carbonate based sand to help buffer the water to a higher alkalinity, dKh, meaning the amount of dissolved minerals in the water. The water slightly dissolves the calcium and other minerals to a natural level above pure water, to make the water harder which suits certain fish species and replicates their native water conditions. African cichlids like harder water with a higher alkalinity, and this helps to create that. However, other cichlids like Discus need softer more acidic water so this wouldn't be a good choice for those fish.
