I don’t know what I’m doing wrong; maybe my timing is off or my oil isn’t hot enough or too hot but anytime I have tried to do this, my tortillas still fall apart when I try to roll them 😖 you make it look so easy!!!

How could I use flour without them getting mushy?? Should I prep them like you did for the corn?? Please help me out this looks sooo good with the cream style sauce. My mother in law used to always prepare the entomatadas like yours at 16 minutes with her homemade salsa whenever she was feeling lazy but wanted something yummy as we always had salsa on hand, so delicious!!

I lost my Google acct because I didnt have the same phone and couldnt sign in and Google said they'd get back to me in 7 to 10 business days, and I needed to get to something in my laptop so I opened another google acct. Which was no problem but I lost many years of saving some great recipes, kids graduations, etc etc...and I lost you! I had so many of your fabulous recipes and I couldn't remember anything (from being so mad I'm sure)....but I found you again and now have to rebuild all my recipes. I had a TON of recipes, but yours were my favorite Mexican food recipes. If you haven't heard from me in awhile, come hunt me down so I don't lose you again ~ LOL ~
I love the fact that you are bilingual so fluent makes me feel proud that you own that. Nowadays children are not being tough to be bilingual. To me that's sad. I tried my best with my son but their preference is English which upset me because they can not communicate well with their Grandma...
Ok. I have to try some of these recipes. I particularly want to try the last one. I didn't know that potato enchiladas was a thing until today. This is the second video I have seen today with potato enchiladas. This one looks so good. The other one didn't look as good. 😂
Alternative to No meat filling enchiladas: I tend to get tired of too much meat so for my red chile enchilada filling I use small amount of jalapeño juice to marinate chopped onions and if I want a lil more spice in my enchiladas I will also chopped a few jalapeno chiles in my onions. Just use a fork to drain extra excess when filling your enchiladas. I sometimes add queso fresco to give my filling a different taste in conjunction to my marinated chopped onions. People tend to forget that not everything needs meat to have a taste.
