Hey Jinne, right now as I type I'm processing your lentil soup. I held off until I could get the beef broth. I have a ton of chicken broth, but I found a gigantic hole where the beef broth ought to have been. So, good on 2 levels. More ready to eat food for the pantry and I know that I have to get more beef broth. I'm going to make it with the chicken broth too. And if I make rice to go into the bowl before I pour this wonderful soup over it, it'll be a complete protein! The same as having meat!

The difference today is that I'm going to can it in pint jars so I'll have a ready to eat single meal. I'm also going to can vegetable soup in quarts. Besides, my spinach is as high as an elephants eye in the garden already. Hope this bodes well for everyone's garden this year. Yee Haw from a hot day in the Great State of Texas. Oh... I am excited today! I was looking for an alternative to potatoes for the homemade chicken soup. White rice, yes, but red rice better, so today we are adding lentils. It is my first time using lentils ever, for anything, and they are in the pantry. Barley too, but I will research that a different day. : ) I think a tablespoon of lentils per pint jar will work to start. Chicken, onion, garlic, carrots, celery and then the seasoning, cooked chicken (yesterday's crockpot) and then the bone broth. Wish me luck and let me know by 1 pm ish if it is a no, no or too many in the jars. Peace. And thank you!!

Oh, your soup looks very yummy! So, you don't go by the guidelines of the canning books and food preservation recommendations to only fill your jar half full with solids, and the rest liquid for soup? I have been trying to follow the rule, but it seems like too much liquid, but of course I want my canned food to be safe. Soups are my favorite item to can. Thanks for sharing this with us!

I practice safe canning, but do not follow every USDA suggestion. I think its important to learn what they suggest, but once you are comfortable with canning, it's also important to experiment and do what works for you & your family.. If I don't love a recipe, I definitely adjusted it to my needs. 😉💕🇺🇸

Just a quick word of advice, and you certainly may take this with a "grain of salt" (no pun intended) but, trust me, if you can this right, you can safely eat this YEARS down the road. I've opened bottles that were canned 8 years....and they tasted like right off the store shelf. One trick? OMIT THE DRIED SEASONINGS!!! The oregano, the Italian seasonings and whatever else you're dumping in there. They WILL get bitter over time. Keep the salt, the pepper, the garlic, carrots, the onions, the mushroom pieces, but leave the seasonings mentioned OUT. When you open the bottle.....THEN add the seasonings to taste. You will thank me, the fairygodlady, the mailman, and the kids for paying attention. You can have this just as soup, or add some sausage, ham, or those little Vienna bites (hey, they SHTF and stores closed down so you're eating your stash), and don't forget some elbow macaroni.....or whatever pasta you like. Makes it work...

It could be a little too much food, not quite enough liquid once the lentils expand. Siphoning is usually either too much in the jar or cooingl too fast. It's still safe, though, as long as it's sealed. I'd just add a bit of liquid when you heat it up to the consistency you want.
