I knew it was a kind of pickle but I actually thought it was made with a local soda. There are a lot of countries around the world that use soda/pop to preserve things but I was so confused by the actually fruit/vegetable because I didn’t know if it was daikon or a fruit- I think because generally I hate papaya for its stinky feet, butter texture quality that didn’t exist as this pickle. It’s genius!

That yellow relish is called Atsara or Achara which is basically pickled papaya used as an appetizer.
I wondered if that was it but I was confused because the color was electric yellow!

This was the problem I knew it tasted delicious but it was such a strange unnatural color I couldn’t decide what it was 😊

Filapino food is terrible and salty but their sauce is soy sauce and lemon to balance the saltiness @@ayngelina
