I placed a crock pot goose breast(s) along with a crock potted roast beef at a party I hosted and the goose breast was gone before the beef.

well the reason why duck and geese don't need to be cooked well done is because all the ducks and geese raised in the USA for meat are pasture fed/grass fed. And the science behind why that makes a difference is basically that when you grain feed livestock they develop what's called negative omega-6. Which makes the meat more likely to harbor parasites like tapeworms and microbial bacteria like salmonella whereas pasture fed/grass fed livestock don't develop negative omega-6. And therefore don't develop parasites like tapeworms and microbial bacteria like salmonella. And there is a lot of scientific studies that have been done on this to prove this and I even conducted a experiment myself to prove it. And what I did is I took 2 jars and in 1st jar I put pasture fed/grass fed beef and in the 2nd jar I put grain fed beef. And then I left both jars outside in the 120 degree hot summer Arizona sun for 7 days and when I came back the jar with the grain fed beef had several hundred tapeworms in it and green mold all over it. But the jar with the pasture fed/grass fed beef in it had no tapeworms whatsoever and no green mold whatsoever and just rotted naturally

Wild Geese sometimes have an earthy flavor. I raise geese on pasture. They taste like steak. Rare goose breast is delicious.

Goose breast brine over night in Salt water. Rinsed and seasoned then blackened. Medium rare to rare. I pore a pomegranate reduction sauce over it.

Please take it off the fire when it’s red! As soon as it’s medium or more it’s livery, it literally tastes like beef when it’s cooked rare. I have a great goose and veggie soup I make, just like beef and vegetable soup.
