    I had seen the viral Baked Feta Pasta TikTok recipe a million times and thought to myself "I wish I could just toss a block of feta on some tomatoes and call it a day" SO I thought I'd try to veganize it (literally, on camera, I never tested this before cooking it). You could get some store-bought feta and do this a bit quicker (and it would look more like the OG) but I figured it would be fun to make from scratch.

    Ingredients:
    "feta"
    300 g firm tofu
    4 tbsp melted refined coconut oil
    3 tbsp lemon juice
    ½ cup soaked cashews
    1 tsp garlic powder
    1 tsp onion powder
    ½ tsp dried dill
    1 tsp salt (add more gradually to taste)
    2 tbsp nutritional yeast
    cherry tomatoes (at least one pint)
    3 cloves garlic (at least)
    olive oil, salt, pepper, red chili flakes (for the tomatoes & finished feta)
    PREP:
    -Preheat oven to 400ºF (200ºC)-
    1. Blend "feta" ingredients
    2. place tomatoes, garlic, olive oil, salt, pepper, chili flakes in high-walled baking sheet and mix.
    3. Bake tomatoes and garlic for 15 min, remove baking pan, add your vegan feta (probably 1/2 - 3/4 of the mixture) drizzle a little olive oil over the feta and bake for 15-20 more minutes, or until tomatoes are bursting.
    4. Mix "feta" and tomatoes together to create your sauce (crushing tomatoes to release the juices).
    5. Add cooked pasta, add pasta water to taste to loosen your sauce and reach desired consistency.
    6. Enjoy!

    Word of advice from someone who loved feta cheese and has worked tirelessly to replicate it:
    Crumble your tofu into little chunks and soak it for a few hours in lemon juice, olive oil, oregano, a little white wine vinegar, and dried dill. It will come out BOMB, and you can save the marinade for the salad dressing, just added a touch of vegan mayo or yogurt to make it creamy.

    TIP: to balance the acidity of the tomatoes add a pinch of baking soda to the pasta water that you're adding already in a cup. Not to the pasta water when it's cooking. In Italy it's used to reduce the acidity in homemade tomato sauce. Only a pinch as too much will make it taste like baking soda. I'd say 1/8 of a teaspoon. If it foams it's completely normal as it's reacting with the acidity of foods.

    Tip: if you let your nut cheese sit overnight, it loses the weird aftertaste of nooch and it just tastes like mild sour-ish soft cheese. Dill and lemon also helps a lot, but I see you already thought of that. My favorite recipe ever was a semi-soft dill cashew cheese. My family teased me about it, but it looked gorgeous on the tray (it was completely coated with fresh dill and looked like a real petite cheese wheel) and it was the first cheese to go at our Christmas party, even over the real cheeses. I didn't get any leftovers to take home! Lol

      @@atsum3053 I wish. I lost the recipe unfortunately. My tips from memory are to soak cashews in salted water overnight then rinse, blend with fresh lemon juice and a little water as your liquid, add heavy amounts of nooch, fresh pepper, and salt to taste, squeeze the liquid out thoroughly (I didn't have cheesecloth so I used a strainer lined with paper towels and my hands), leave to set for an hour in the fridge while covering the top with freshly minced dill, flip, cover with more dill, and let rest overnight. I'm sorry that I dont know the exact ratios but that's all I remember

      @@atsum3053 I'm not a vegan btw. I just try to reduce animal products for the environment and what turned me on to nut cheeses was a hilarious interaction as a worker at a health food expo where I got a free sample of the stuff. I exclaimed, "oh, this isn't real cheese? It's made of nuts?" And the poor intern's face dropped in horror and said, "yes, it's made of nuts. Oh my God. Are you allergic?" I laughed and reassured him, "No, I'm not allergic. I'm just surprised because it completely fooled me. Probably want to tell people first though." I love hard cheese and that's probably a while off from being replaced, but for a good spreadable cheese, nut cheese is nearly identical and way more natural than other replacements

      @@atsum3053 it has a great texture, so definitely try it out. You definitely want to use more salt and lemon than you think you need because it gets squeezed out. The only exception I would make is if your nuts are already salted and roasted--then hold back with salt and you have to use plain water. I love experimenting too and loved this recipe so much. I hope you have fun with it!

    I think people always have too high of expectations of vegan versions trying to taste like the original. we need to let go of that, and just think, does this taste good? wether it resembles the original or not

      True. Somethings actually taste too much like the real thing for me, especially the new versions of meatless burgers. Impossible burger tastes so much like meat that it actually made me feel sick the first time I tried it. Also that burger adds vegetable derived "blood" to the burger which is outright disgusting when you open the package to cook it. The uncooked impossible burger smells like meat too. After it is well-cooked I can now get over it but I couldn't deal with it at first.

      @@mygirldarby Both you and Alex are right. I think a lot depends on how long it's been since you tasted the original product. I know a lot of people that are new to veganism want the same taste and texture they are used to. I have been a vegetarian longer than you have been alive🤣 and I much prefer the veggie burgers to the new meats and that idea goes for most plant based products. Although I'm all for people loving the new fake meats if that makes them eat less real meat or transition to a plant diet.

      Agree, but I think it still needs to scratch that itch for people, for example if you’ve ever read a fan inspired version of a book from a different characters perspective. That’s what I want my substitutes to be for me.

    I'm a vegetarian who eats a lot of vegan food and I've tried the "real" version with feta and it's honestly *very* *very* tart! I added a whole lot of olive oil, more tomatoes and sugar to help balance it out. I feel like this vegan version would taste much better! Looking forward to trying it!

    i really like how Merle is pretty sincere about food, you wont need to pretend it is something else. i enjoy her cooking video a lot.
    the real question is.. could i replace the refined coconut oil for another neutral oil? like, vegetable or olive oil?

    Being from Greece, where feta is produced, I can say that feta is NOT a mild cheese :P Although I don't know what products are available abroad. Also, I remember eating this kind of recipe from a young age, especially during summer with tomatoes from my grandmas garden. For many greeks, it's like a childhood memory
    Try adding some basil or oregano and it will bring the dish to another level :) or maybe some kalamata olives.

      I tried it with the violife feta. And Idk if it was the feta or I had super juicy tomatoes but it was so liquidy. I ended up having to blend the sauce up before putting it on my pasta, but it did taste delicious.

    We're cooking it right now! It looked so delicious that we had to try! :) We added to our "feta" 2 extra things: 2 tbsp vegan sour cream and 1 tbsp of maca root :) It was more salty and cheese this way.

    I find it funny that she calls feta one of the milder cheeses. The flavor is pretty potent compared to maybe American or mozzarella.

    For those not wanting to make feta (I am going to try), Violife makes an amazing vegan feta! Will work pretty closely to a dairy feta.

    Not vegan myself, but I respect the choice💯 And it's great to learn some new recipes! I'm often unfamiliar with the substitution choices used, (and am surprised by the number of options) and I want to learn so I can have ingredients and ideas at the ready if I have guests that are vegan/lactose intolerant etc. Thank you so much Merle!     We do this feta tomato thing often. My mom is vegan so we also do a vegan version but we just use store bought vegan feta cheese 😅 it makes it a very easy dish. :) but you're spin on it seems really good maby even worth trying :D

    Merle, my favourite pasta is spaghetti aglio, olio e peperoncino which is naturally vegan. I once added chopped green beans to the spaghetti aglio, olio e peperoncino because I was cooking for a couple of Chinese guests and used fresh coriander (cilantro) instead of parsley, they loved it!

    After watching this video I tried making it, my first romp in vegan cooking; and I loved it! I made a yummy tofu scramble with this really good vegan cheese and it wasn't bad! It reminded me of my mom's re-hydrated/powdered scrambled eggs from her Medifast diet pack; my brother said it tasted like the eggs in MREs he takes hunting. Those are not bad comparisons, of course, it's not actual eggs but it's a very passable substitution that I'm gonna use more often

    I made a vegan version using the violife feta (although IMO it tastes more like goat cheese than feta) and it was ok/good. Very very liquidity but tasted good. I like that your version looks creamier so I might give yours a try.

    That looks extremely as good and simple as the seitan meat. I can't decide which one to make first, they're seem very delicious. Thanks for sharing such a fantastic plant-based option for pasta. I've been vegetarian for 1 year now but, I'm gonna try this recipe for sure! 😘😉

    in Switzerland we have a brand (Violife) that sells a vegan feta, and it's actually very delicious, it even smells like it's made out of goat's milk ^^Some of my vegan friends don't even like it because it reminds them to much of the real thing ^^

    random idea but I feel like hummus (or ground chickpeas with seasoning) work well to make more realistic feta

    That looks so good! And using tofu instead of vegan feta is a lot healthier, if that's something someone cares about - lower in calories and fat, plus it has protein.
