@@jack-29976 most dairy farms with lots of acreage allow cattle to graze in pasture outside of milking time. Corporate dairy and beef farms don’t. I have between 700 to 1000 beef cattle with about 700 acres of grazing space. My neighbor operates a successful dairy where he pasteurizes milk,for commercial. He also sales butter and other milk products. This has long been the difference in corporate vs family owned. However family farms are sold to these corporations. The reason these cattle are housed can be of 3 reasons. First is controlling what the cow eats. The second reason is either lack of space or too many cattle. Third can be government interference as in California who has just about run every dairy and beef farmer out of the state due to EPA regulations, etc. I know because we had Nash Family Dairy to move to our state from there. I would suggest this view you are responding to is more to the first.
When I was a teenager living in Italy, we could get Parma for $4/kilo in the 70s. It was and is an exceptional cheese that can’t be reproduced by those claiming the borrowed title. While the price is high, the quality remains spot on. The process of making the cheese with the unbelievable consistency is peerless. Their product remains world class.
but i guess at the time $4/kilo equivalent to $40/kilo given that time inflation and currency value. I guess a meal that cost $10 now cost below $1. But still it still considered cheap given its quality. But now the value just blow up to even thinking buying a slice
@@slyztercoreveanged3175 I can only tell you the quality hasn’t changed in the 50 years I have purchased it. It really is a tribute to their heritage and their strict quality control. People will buy the best quality and Parma is it. There is no other.

As much as I like parmesan, this video has pushed me away from the Italian real deal and I'll be looking for local alternatives where the cows are treated better.
Best cheese in the world, when I was kids I spent the Summer in the area of production of Parmesan, we kids went to play in the farm and every day we have a pieces of cheese, there I learn how they do to make a form, I was 10 years old while now I am 76, and also today I have to buy a piece of Parmesan, because "The mouth is not tired if not fell of cow"

I managed the cheese counter at Wegmans for a long time and miss that job sometimes. My favorite part of the job is cutting open a Reggie Parm wheel and giving customers a sample right out of the when after it's cut. Reggiano ain't cheap but watching customers by a block after it's cit and before it's wrapped in cellophane...amazing
Korea englishman josh and ollie are really lucky to not only get to see the factory and how it's made but they even have a 5years aging cheese for them to taste it.
I once bought one piece of cheese for 1200 dollars in Italy when we went abroad with my family, then bought the cheese as a souvenir, the taste of Italian cheese is very delicious ❤

Showing pride in making this cheese the same way it was a thousand years ago....the only thing that's changed is that the cows are treated much worse now. As someone who recently took up home cheesemaking, it's more satisfying knowing the milk I use is from cows that are allowed to roam and graze.

Italian is always a great way of taste when comes to riches cheese and dried meat. Always fresh and taste great. I use to be a Salumeria front house chef for an Italian restaurant back home Hawai'i on they isle of O'ahu. And what u see here , is what I worked with and served on a platter plate. Three different cheeses and three different dried meat , one ounce of each cheese and thin slice of cure dried meat. Italian way in a fined dinned restaurant that I worked at that I made , costed about $80/$100 . Can't get any fresh and good when it's not Italian way of serving and making. 💙
I am so happy that they treat cows nicely. They fed them well and kept them in a clean place. This is how you take care of your animals. P.s Plus it would be so nice if they use some gloves in the entire process.. just saying, dont hate.
I always love Parmesan esp. shredded Parmesan sprinkled atop the Spaghetti plus with fresh chopped Sweet Basils. The best and always requested dish. When in pizza tho it is always melty Mozarella and Parmesan can be added as shredded or for garnish. Still I love cheese and go crazy everytime. 🤤🤤🤤😋😋😋

Beautiful video - apart from seeing parmesan wheels stored high on shelves in Italy, it reminds me of Wholefoods store in Cambridge Mass where I saw something like 5-6 or more complete wheels just stacked around the place like decoration - at $1000 each I thought that would be conspicuous consumption - 'oh yeah and I'll take one of those too thanks ...'
What’s lovely is how the dairy cows are cared for and treated with love and respect When you see the journey in which this takes that’s when you realise why this costs as much as it does but what people do not factor in is the welfare and the health of the dairy cows all year round
those cows are treated worse, they are not free ranging. they are fed a certain amount of x, y and z and that's it, no more no less. this allows high control over the milk product but that comes at the cost of the cows freedom. also they are not any more or less healthy then any other cow on any other farm, they all need to be checked out and have checkups etc. anyway the reason it's so expensive is because it's a monopoly, that's the reason. milk isn't expensive, nor is rennet. truly you cannot taste the difference in 99% of dishes. you are effectively paying for the name on the packaging, which if that makes you feel better then go for it!

I'm currently studying sustainability in the field of food production and I'm wondering why you're not letting the cows freely graze and eat grass, it would be better for their health, and you could save on gasoline you use to harvest the grasses? (1:45 for reference) Research has shown that cows that are allowed to graze and roam freely in pasture tend to display more natural behaviors and have better physical health compared to those that are kept indoors. For example, free-range cows are able to socialize with other cows, move around more freely, and have access to a wider variety of food sources. Cows that are confined to indoor spaces may experience stress, frustration, and boredom. Cheers and keep up the good work!

You ALWAYS save the rind part, to toss in spaghetti sauces, soups etc! Always! You can’t shred and eat it but in soups and sauces it adds tons of flavour (just fish out the big pieces before the meal!).

Was in San Grato Lodi, almost 60 years ago at the times they have almost 200-300 cow, now is shout down years ago the make parmisan, Butter and stracchino
I'm very sure Parmigiano Reggiano ships whole wheels too; they even have an official USA channel with a video on how to properly open one. But don't mistake it for some soft cheeses. One wheel weighs 72 pounds.

I have tasted Parmesan cheese in Aachen Germany it is the best cheese grated put on top of Spagetti Bolognese with meat sauce and crushed garlic in olive oil...

You ALWAYS save the rind part, to toss in spaghetti sauces, soups etc! Always! You can’t shred and eat it but in soups and sauces it adds tons of flavour (just fish out the big pieces before the meal!).
cheese is a must in all kinds of foods and a great condiment in burger shops and restaurants.

I'm very sure Parmigiano Reggiano ships whole wheels too; they even have an official USA channel with a video on how to properly open one.
But don't mistake it for some soft cheeses. One wheel weighs 72 pounds.

I have tasted Parmesan cheese in Aachen Germany it is the best cheese grated put on top of Spagetti Bolognese with meat sauce and crushed garlic in olive oil...
