Have you thought about having a multiplayer game with all of your friends as various Chinese warlords against a TommyK Japan? Since I don’t know if he’s ever lost, it could be interesting seeing your guy’s tactics
I would suggest the chaos ai mod if you are observing. It allows the ai to declare war on each other outside of their focus trees. Makes things way more unpredictable.
Hmm...how about you try out ExpertAI mod? I played a couple campaigns recently in "challenging" mode where AI actually tried to make good templates and better unit handling and stuff. One as Czechoslovakia, where I fought Germany from 1938 to like 1950 or so, and another as Germany, where I was actually struggling on the Western Front until 1942 (though with a good navy, defeated the Allies by 1945 or so. Typical snowballing). You'd be interested to see the AI *builds fortifications along an active frontline*, so it's actually very tough to push with just infantry. Almost as if it's WW1 roleplay with AI (and they have like good tanks and planes and plenty of them, so you need anti-tank in single player for once!). Very refreshing compared to basic Paradox AI!
If you do another one, I feel kaiserredux could be interesting. Also still feel you really should have turned historical AI off to make it more interesting.
