As someone who makes mac and cheese regularly, a few tips to avoid a gritty texture, Mav: 1: When making your roux, melt your butter until it starts foaming slightly and add the flour to this and cook it out. You can smell when this is done as it will smell nutty, then you can add your milk. Adding flour into the milk without cooking it can give you a floury/gritty texture and taste. 2: If possible, shred your own cheese. Nearly all packaged shredded cheeses use anti-caking agent to stop the cheese from clumping together in the bag which can make for a gritty texture, rather than a smooth one. If you are finding your sauce becomes gritty, these are the 2 most common reasons why. Hopefully it helps. :)

I can't say for sure what you specifically have encountered, but often when making a cheese sauce, it is recommended to add the cheese while off the heat. Too much heat when mixing the cheese into the milk and roux can cause a grainy texture. Keep on trucking!

Tillamook also has a tour of their facility, 50 years ago, as a child on a road trip we took a tour it was really primitive, the new facility is much more high-tech... when you have too many children vacationing in the station wagon with two boxer dogs factory tours are cheap entertainment, Warehouse are used to also have a tour of there Presto type logs.. lots of interesting tours in Oregon Washington.. Buffalo is usually very lean, I can get it at my Wholesale grocery store in Patty's very inexpensively..

Dear Mav, that's not how you make a roux. Next time, melt your butter, add flour and have the flower absorb the butter. Then bake it until you smell cookies! Then add your stock/milk/cream. Try to make ragout, vol au vent, or scalpicon as wel. Scalpicon is the basis for croquettes. Have fun, from Friesland!

pro tip: add the flour to the melted butter, then spend a couple minutes cooking just those 2 ingredients in the pan until it starts to go a very light caramel color, then add in a little milk and stir until it's combined, then slowly add in the remaining milk while stirring. also, you want the same amount of flour as butter. so 1 Tablespoon butter and 1 Table spoon flour i know it might seem like an unnecessary step, but doing it this way will keep you from getting lumps of flour, or that gritty texture you mentioned. also creating a proper roux this way will add some good flavor, which would help with the lack of flavor you mentioned. and if you need another reason to do it this way, raw or undercooked flour can contain some pretty bad bacteria that can make you very sick, and could of easily contributed to the discomfort you felt after eating. you most likely cooked it long enough, but all it would take is 1 little lump of flour that didn't cook all the way through and you could get hit by E.coli and spend the next week with abdominal cramps and peeing out your butt, and you're super unlucky your kidneys might even shut down. flour and things that contain raw flour like pancake or cake mix even gets recalled for reasons like this, but most people have no clue, but that's why you should also never eat raw cookie dough, or lick the beaters after mixing up a cake or brownies or anything with raw flour. so ya, that 1 little step of making a proper roux will add flavor, give you a better texture, help keep you from getting sick, and just give you a much higher chance at making a better end product in general. oh! and next time try the "ethnic foods" isle near the sriracha, soy sauce, and baked beans for cans or jars. and if the chipotles aren't there you can look in the spice/baking isle for dried and powdered chipotle.

Reccomendation for your roux! You should cook the flour with the only the butter first, it helps mitigate the raw flour taste and should provide a thicker base...once you have a butter/flour paste, then add the milk!
If you add the flour to the butter before adding the milk, you shouldn’t get that gritty texture. Also, make sure not to make your cheese sauce on too high of a heat, because that’ll cause a grittier texture too.
Also, add a bit of American cheese to get a really creamy sauce. The America cheese has emulsifiers in it that help the fats not separate which causes the gritty texture.

Great vid. Tip you can add some hot sauce (brand of your choosing) to the cheese sauce before adding the mac. That will help with the blandness and add some good spice as well

I was an exchange student in Wyoming back in 91/92 and spent some time in Jackson Hole and Yellowstone. What an absolutely outstanding naturally beautiful part of the world and also amazing people. Tip. Put the flour in first, then the butter and cook for a bit then add the milk.
Insanely good fishing on Henry’s fork river. Also you can drive to the top of sawtell peak. It’s an incredible view I’ve been up there on snowmobile. Be a sweet place to make a meal and or maybe sleep. If it’s clear out you can see the Tetons, the Madison range, possibly beartooths as well

Mav pours flour into a mixture of milk and melted butter and calls it "a roux". Where I come from we call that pancake batter.

When you put Buffalo Mac n cheese I thought it was going to be buffalo sauce. Bison is good meat! And that dish looked very tasty.. Started to drool. I can see you spicing it up if you cook it again.

Hey Mav, love the channel. A little cooking tip, 1 tablespoon flower to 1 table spoon butter ration, mixed together before adding milk will give you the perfect sauce

Reccomendation for your roux! You should cook the flour with the only the butter first, it helps mitigate the raw flour taste and should provide a thicker base...once you have a butter/flour paste, then add the milk!
If you add the flour to the butter before adding the milk, you shouldn’t get that gritty texture. Also, make sure not to make your cheese sauce on too high of a heat, because that’ll cause a grittier texture too.
Also, add a bit of American cheese to get a really creamy sauce. The America cheese has emulsifiers in it that help the fats not separate which causes the gritty texture.

Great vid. Tip you can add some hot sauce (brand of your choosing) to the cheese sauce before adding the mac. That will help with the blandness and add some good spice as well

I was an exchange student in Wyoming back in 91/92 and spent some time in Jackson Hole and Yellowstone. What an absolutely outstanding naturally beautiful part of the world and also amazing people.

Insanely good fishing on Henry’s fork river. Also you can drive to the top of sawtell peak. It’s an incredible view I’ve been up there on snowmobile. Be a sweet place to make a meal and or maybe sleep. If it’s clear out you can see the Tetons, the Madison range, possibly beartooths as well

When making a roux, cook the flour in the butter first, continuously stirring, until it turns a light tan color, then add the milk or cream. You won’t be disappointed and it will be smooth.
