This show has the potential to be one of the best of all time in my opinion, the world and character building seems a huge point to the writers, loving every second

So a few little things you noted at the end there:
    1. Hatamoto in English essentially mans “bannerman” or “origin of the banner”.
When it came to proclaiming Hatamoto, these men were literally the most trusted men within a lords household able to have full on communication at anytime with their lord without request for meeting and they could even carry weapons around their Lord.
In battle, these men would directly fight by their lords own command and would usually be found directly beside his command position as both a retainer in his defence but also as a companion in mind, suggestion and companionship.
    2. Swimming is actually something very important here.
For one the historical inspiration in which Toronaga is based off of it Tokogawa Iyeasu.
During Iyeasu’s time as a hostage, he would usually be picked on by most of the upper clan boys and samurai he was hostage too. As such he ended up making friends with not the upper nobility by the lesser samurai and even the peasantry.
One of the many things he’d join them in doing is swimming the rivers in the clan province.
As such Toronaga sharing his love of swimming with Blackthrone is considered a high show of trust and respect.
In addition to just that, it was considered a high trust action to go swimming with another too.
As not only are you alone in the water with them, out of your armour and away from your weapons, it is extremely easy to also be assassinated out there - all it takes it getting the best of the power imbalance and one can easily force another under water until drowned.
As such, to go swimming with another was considered highly trusting as you essentially put yourself in a more mortal position beside them.
    3. “God he’s got to be absolutely exhausted after that!” Huh… a known trickster of a Lord having his opponent tire himself out while showing him how to dive, only to be invited to race him to the shore afterwards… hmm?

Tokugawa Ieyasu (ee-a-ah-su) and Toyotomi Hideyoshi (who the taiko is based off of) both served under Oda Nobunaga. Together they are know as the 3 great unifiers of Japan.

Yabushige just wants to be on the winning side. Toranaga doesn't need to trust him to control him so long as he can prove he can win.

Tokagawa Ieyasu (that is the letter I, not an L), pronounced close to "Yey as soo". Blackthorn was given a title, not a new name - a "hatamoto" is a trusted bannerman and retainer. This makes him a part of Toranaga's council, like Lord Todo Hiromatsu or Yabushige (more trusted than Yabushige, lol) as people Toranaga will consult with and keep at his side during the war, even though right now Blackthorn doesn't have any lands/income. I think they continue to use "Anjin" (pilot) as his name (in the book anyway).
During the escape, you were saying they should have shown Blackthorn some respect (after all the yelling and distraction) but no one else in the party was aware Toranaga had switched places with his wife. The Catholics are going to do everything they possibly can to separate Blackthorn from Toranaga - his knowledge is too damaging and Toranaga has never been very friendly with the Church anyway. This is why allowing them to build a church in Edo is a huge deal - Edo will become Tokyo, if you weren't aware. Having an approved church in the largest city in Japan? They would be able to convert a lot of people.
Of course, if Toranaga does become the Shōgun, all deals become renegotiable and all promises made under duress are breakable...

The series is set in 1600, so after Nobunaga (or Goroda in the Shogun novel) and before Sekigahara.
Ishido is based on Ishida Mitsunari.
Sugiyama (the Christian daimyo) is based on Maeda Toshiie.
Onoshi (The leper daimyo) is based on Otani Yoshitsugu.
Mariko is based on Hosokawa Garcia, daughter of Akechi Mitsuhide, the guy who betrayed Nobunaga.

You consider the diving scene akward? Well, in the novel ALL of them have to learn diving. Naked! When John sees Mariko in the nude he understandably needs to dive fast again. ;-)
