At a stop, I stand on my tip toes, with my seat not too high, being only 5'9" with a less than 30" inseam. My ebike is 26", pretty large, long and heavy at 105 lbs. I get rather good leg extension when I peddle on my short legs. I'll throttle out and hop on the seat from a start as well. Thank goodness for ebikes!
Thanks for posting this. I am recovering from knee replacements and I am thinking I need to raise my seat for betyer extension in the spring and I am used to having my feet touch the ground.
I use clipless pedals so I'm usually prepared to put my foot down at stops. I have pedal assist only so I turn up the assist to get going. On your audio recorder, there is a company called Talon Grips that sells rubberized or sand type adhesive grips for firearms. They sell sheets as well like a 5 x 7 sheet. I have used this product on a bluetooth earbud case that is so slippery. BTW, I'm enjoying the Russ Talks videos.
I use a similar method(when straddling the bike) to start and stop except that I don't use a throttle and sometimes just push off with my foot that's on the ground instead of starting with a pedal stroke. When I'm first starting off and haven't mounted the bike yet, I'll use a pedal stroke with my left foot and swing my leg over while the bike is moving. When I was younger I would dismount the bike the same way by swinging my right leg back over while the bike was slowing to a stop. Since I'm getting older and a lot stiffer, I don't try that dismount anymore.

how about putting the bike on a stand and do demos in the garage or house?
I do like that, So I'm standing with most weight on one pedal. and then I hit the throttle, and it throws me right into the seat.😅
