Would this essentially be loading all of the data on page load, but it is just hidden until clicked, so the page would be quite heavy?

Yes, the data is in the markup.
Whether it'll affect the page's performance profile or not, it depends.
If you use some kind of pagination on your loop, are lazy loading the image in the quickview, and essentially just doing the same thing as in the video. the overhead on the loading ( not the size ) of the page in the real world would be minimal.
