These kinds of taste tests should have a follow up episode, where they get the test results from a lab. It would be tested for all kinds of pathogens, toxins and heavy metals. It could also have interviews with horrified scientists/doctors who comments on the dangers of eating that stuff!

Technically, if something is correctly canned, can't it stay foodsafe forever? Obviously, metal leak and holes in the seal changes that.

I tried a 5 year old bag of Mountain Dew Doritos last week, not recommended! But fresh it was great! Tasted like Mtn Dew with Doritos and a fizzy tang to them in the salt on it that is sweetened.
As someone who use to work at a food bank, it was most likely just fine. Canned food are good for years past expiration unless they are very acidic like tomatoes.

From google, old cans were often made of steel, which is a combination of iron and carbon (and possibly some other additives depending on use). So the blood taste were probably iron and possible other added elements.
I hope there's no lead.
