  • You guys have been requested for pure☁milk macaron recipe so here it is!
    I'm sorry that I couldn't prepare Chuseok Holiday Special video 😢
    I hope you guys have a wonderful Chuseok!
    This macaron has real buttercream and milk jam as its filling.
    I wanted to make pure white macorons without food coloring but I suppose it just cannot be done haha
    A subtle ☁scent of milk comes from ☁milk jam inside these butter cream macarons. The flavor is pretty light and not too strong so everyone can enjoy them 😋
    If you don't feel like making ☁milk jam from scratch, you can substitute it with condensed milk :)
    It will depend on how big you want your macarons to be but you can make roughly about 15 macarons with this recipe
    ▶ingredient
    + macaron shells
    70g egg whites, 70g sugar, 92g almond powder, 84g powdered sugar
    + milk spread
    100ml milk, 50ml fresh cream, 50g sugar
    + buttercream
    1/2 vanilla bean, 20ml water, 70g sugar, 40g egg white, 150g unsalted butter
    - Macaron Shell Instruction
    1) Beat the egg whites in a bowl
    2) Gradually add the sugar 1/3 at a time until fully incorporated
    3) Beat until stiff peaks form as you see in the video, sift all the dry ingredients together and add the mixture into the bowl
    4) Gently fold with a spatula until just combined and then press it against the bowl
    5) When the batter holds its shape and falls slowly like lava, transfer the macaron batter into a piping bag
    6) Place a piece of parchment paper over the pan and pipe the macarons onto the parchment paper
    7) Let the macarons sit until dry to the touch
    8) When the macarons are dry to the touch, preheat the oven to 300˚F (150˚C) and bake the macarons for 13~15 minutes
    9) Cool the macarons completely

    - ☁Milk Jam Instruction
    - 1) Pour all the ingredients for ☁milk jam in a mediun pot and stir
    - 2) Continue to stir over low heat for 10 minutes
    - 3) Cook less or more than 10 minutes until the mixture reaches your desired thickness
    - 4) Let the ☁milk jam cool
    - 5) Transfer the completed jam into a piping bag
    - Buttercream Instruction
    - 1) Pour sugar and water into a pot and put it over low heat
    - 2) When it starts to boil, beat the egg whites
    - 3) When the temperature of the syrup reaches 118˚C, gradually pour in the syrup into the egg whites while continuously beating
    - 4) Beat until it reaches room-temperature
    - 5) Add room-temperature butter to the mixture and continue to beat
    - 6) Don't stop beating if the mixture looks separated
    - 7) Scrape the vanilla seeds and add them in while beating
    - 8) Butter might melt If the temperature of meringue is too high so be careful
    - 9) Transfer the completed cream into a piping bag
    - Final touch
    1) Pipe a swirl of filling around the edge of cooled macaron shells
    2) Pipe the ☁milk jam on the center of the shells and sandwich the shells together with the remaining halves

    안녕하세요 오늘은 요청해주신 순 ☁우유 마카롱을 준비했어요
    이번 추석 영상을 준비 못 했어요 😢 남은 추석 연휴도 잘 보내시길 바라요 🙆
    동물성 버터로 만든 크림과 ☁우유 잼을 넣어 만든 마카롱이에요
    색소를 쓰지 않고 하얗게 만들고 싶었는데 색은 어쩔 수 없나봐요 허허
    ☁우유잼이 들어가 ☁우유 향이 은은하게 나는 버터크림 마카롱이에요
    부담없는 맛으로 취향이 그렇게 갈리지 않는 마카롱 같아요 😋
    ☁우유 잼을 끓이기가 귀찮다면 연유를 넣어 만들어보세요 :)
    짜는 크기에 따라 다르지만 대략 15개 내외로 완성됩니다
    ▶재료 (15개 내외 분량)
    + 마카롱 꼬끄 (쉘)
    흰자 70g, 설탕 70g, 아몬드가루 92g, 슈가파우더 84g
    + 우유 잼
    우유 100ml, 생크림 50ml, 설탕 50g
    + 버터크림
    바닐라빈 1/2개, 물 20ml, 설탕 70g, 흰자 40g, 무염버터 150g
    - 마카롱 쉘 만들기
    1) 흰자를 볼에 담아 휘핑해줍니다
    2) 설탕을 3번 정도 나눠 넣어가며 머랭을 올려줍니다
    3) 영상과 같은 뿔이 살짝 휘는 단단한 머랭이 완성되면 가루를 섞어 체쳐 넣어줍니다
    4) 주걱으로 날가루가 없을 때 까지 저어주고 날가루가 보이지 않으면 주걱으로 눌러줍니다
    5) 끊어지지 않고 이어지며 천천히 떨어지는 정도가 되면 1cm 깍지+짤주머니에 담아줍니다
    6) 팬 위에 시트를 깔고 반죽을 짜줍니다
    7) 손으로 만졌을 때 묻지 않을 때 까지 건조합니다
    8) 건조가 다 되었으면 오븐을 150도로 예열후 구워줍니다 (150도 13~15분)
    9) 구운 마카롱은 식혀줍니다
    -
    - ☁우유 잼 만들기
    - 1) 냄비에 ☁우유 잼 재료를 넣고 섞어줍니다
    - 2) 약불에 올려 계속 저으면서 10분 동안 끓입니다
    - 3) 농도에 따라 더 끓이거나 덜 끓입니다 (농도 영상 참고)
    - 4) 끓인 ☁우유 잼은 식혀줍니다
    - 5) 식은 잼은 짤주머니에 담아둡니다
    - 버터크림 만들기
    - 1) 설탕과 물을 냄비에 담아 약불에 올립니다
    - 2) 끓기 시작하면 흰자를 휘핑합니다
    - 3) 시럽의 온도가 118도가 되면 흰자를 계속 휘핑하면서 시럽을 부어줍니다
    - 4) 미지근해질 때 까지 충분히 휘핑합니다
    - 5) 실온에 두어 찬기가 완전히 빠진 버터를 조금씩 넣어가며 휘핑합니다
    - 6) 분리 되는 것처럼 보여도 계속 휘핑해줍니다
    - 7) 긁어둔 바닐라 빈을 넣고 섞어줍니다
    - 8) 머랭의 온도가 너무 높으면 버터를 넣었을 때 녹으니 주의합니다
    - 9) 완성한 크림은 짤주머니에 담아줍니다
    - 마무리
    1) 식은 마카롱 쉘에 버터크림을 둘러 짜줍니다
    2) 가운데 ☁우유 잼을 넣고 다른 마카롱 쉘로 덮어줍니다

      If you're considering making them, you actually really want to use grams instead of cups because you have to be extremely exact when making macarons.

    for those of you who want to make this
    here are some tips and stuff i have for you while i made this:
    macaron:
    * if youre new to macarons you might not get it on your first try
    * dont rush, it takes 30-45 minutes or even an hour for them to be dry to the touch
    * make sure you sift your almond flour especially, because if not it makes the tops of your macarons bumpy
    * some ovens temperatures arent what they say they are, some might be too hot, others lower. if you’re serious about macarons buy a oven thermometer.
    milk jam:
    * its basically sweetened condensed milk (lecheda) just like in the description you can buy this instead of make.
    * it took forever when i left it on low, once i started turning up the heat i was getting a thicker, pipable consistency
    * you want to see bubbles, thats when you know its getting thicker
    * a color change also happens when it gets thicker. goes from off white to light yellow, like in the video. make sure you keep watch cause it may burn
    buttercream:
    * DONT MIX THE SUGAR !!.!.!.!.!.!. it will crystalize. it becomes hard and you wont be able to use it. this sugar must be used to cook the egg whites.
    * a candy thermometer will help because you can know when the sugar is done.
    * beat in melted sugar slowly
    * you butter has to be ROOM TEMPERATURE because then it will cause the buttercream to split
    * add butter in very little pieces, i used a spoon to add the butter, it was basically spreadable when i used it.

    개인적으로 대부분의 요리 영상에서 요리과정이 짧게짧게 끊어 지는 것이 아쉬웠는데 한세님 영상은 적당한 길이에서 끊어주셔서 요리과정을 즐길 수 있어 너무 좋네요!! 조용하고 딱 요리하는 소리만 나는 것도 정말 취저 ㅠㅠ! 바아로 구독, 좋아요 눌렀습니다 ㅎㅎ

    항상 생각하는건데 핸드믹서 돌릴 때 소리를 좀 조절해주시는 것 같아서 넘 좋아요~!~! 가끔 핸드믹서의 시끄러운 소리를 듣고 깜짝 놀랄때가 많아서...ㅋㅋㅋ

      Well, koreans call all milk creams as 'fresh cream', but I think HANSE used whipping cream. Not whipped cream. Most of products named 'whipped' must be very bad with baking, becasue most of them are already whipped, selled as spray type.
      In America, the fresh cream is subdivided in 3 ways(as I know)
      Light cream: butterfat 18-30%
      Whipping cream: butterfat 30-36%
      Heavy cream: above 36%
      Most of Korean fresh cream brands are 25-35. And be careful about vegetable whipping cream. They are not milk cream.
      All of those infos can be inexact, and I'm Korean, so my English may be incorrect about grammar.

      괜찮을것 같습니다! 바닐라빈은 계란 잡내(비린내)를 없애주는 역할을 하는데 없애주는 효과가
      바닐라빈>익스트랙 이기때문에 빈 보다는 효과가 조금 떨어져도 익스트랙도 정말 좋은 효과를낼 수 있습니다!

    The recipe surprised me. I am used to seeing people add twice as much powder sugar to almond flour which turn out way too sweet for me at least so I am optimistic about this recipe

      actually it takes about 2-3days because after the cookies are baked, they have to sit out for a few days and then the filling is added to make it taste its best

    Quick tip: macaroons don’t need to be perfect. It’s just merengue cookies and filling, if you don’t get hung up on how good it looks then you can just make them and they’ll taste perfectly fine either way.

    scrolling through the comments for something about the actual recipe but all i can find are comments about the sugar like 🤔🤷‍♀️
