- Are you freezing? I have literally been freezing for about two weeks! And nothing hits the spot better when it's freezing cold outside than a hot bowl of homemade soup! And I have an entire week's worth of soups ready for your meal plan in today's video!! Not only will they warm you up, but they are also SOUPer easy on the budget, too--right around $1 per serving!

Shredded Chicken Taco Soup
*Ingredients:*
2 cups shredded cooked chicken
2 tablespoons olive oil
1 large onion, diced
1 can (15 oz) corn, drained
1 container salsa
4 cups chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
-1 teaspoon dill
-1/4 C dry milk powder
Salt to taste
*Optional toppings:*
Shredded cheese
Sour cream
Sliced avocado
Chopped cilantro
Lime wedges
Tortilla chips
*Instructions:*
1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Stir in the shredded chicken, corn, diced tomatoes, and salsa.
5. Pour in the chicken broth and stir in the taco seasoning, cumin, and chili powder. Season with salt and pepper to taste.
6. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes to allow the flavors to meld together.
7. Serve hot with your favorite toppings.
Creamy Tomato & Spinach Soup
*Ingredients:*
2 cups shredded cooked chicken
2 tablespoons olive oil
1 onion, finely chopped
2 cans (14 oz) crushed tomatoes
4 cups chicken broth
1 cup heavy cream
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
3 cups fresh spinach, roughly chopped
Salt and pepper to taste
*Optional toppings:*
Grated Parmesan cheese
Croutons
Fresh basil leaves
*Instructions:*
1. In a large pot, heat the olive oil over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes. Add the dried basil, dried oregano, and red pepper flakes (if using)
3. Stir in the crushed tomatoes and chicken broth. Bring to a simmer.
5. Add the shredded chicken. Simmer for 15-20 minutes to let the flavors meld together.
6. Reduce the heat to low and stir in the heavy cream. Let it gently heat through for a few minutes.
7. Add the spinach and cook for another 2-3 minutes, until wilted.
8. Season with salt and pepper to taste.
9. Serve hot with your favorite toppings.
Here's a comforting recipe for Chicken and Pasta Soup with Carrots:
Chicken and Pasta Soup
*Ingredients:*
2 cups shredded cooked chicken
2 tablespoons olive oil
1 onion, diced
2 large carrots, peeled and sliced
1 box pasta (such as ditalini, elbows, or orzo)
6-8 cups chicken broth
Salt and pepper to taste
Optional: fresh parsley for garnish
*Instructions:*
1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Add carrots and cook for another 4-5 minutes until the vegetables are tender.
4. Pour in the chicken broth and bring to a boil.
5. Add the shredded chicken and pasta. Stir well.
6. Reduce the heat and let the soup simmer for 10-15 minutes, or until the pasta is cooked and the flavors have melded together.
7. Season with salt and pepper to taste.
8. Serve hot and garnish with fresh parsley if desired.
BBQ Chicken Soup
*Ingredients:*
2 cups shredded cooked chicken
2 tablespoons olive oil
1 onion, diced
12 oz corn kernels (frozen, or canned)
1 lg can baked beans, with sauce
1 can (15 oz) diced tomatoes, with juice
4 cups chicken broth
1 cup BBQ sauce
1 teaspoon smoked paprika
1 teaspoon chili powder
-1 teaspoon cumin
Salt and pepper to taste
*Optional toppings:*
Shredded cheese
Chopped green onions
Chopped cilantro
Tortilla strips
Sour cream
*Instructions:*
1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Stir in the shredded chicken, corn, baked beans, and diced tomatoes.
5. Pour in the chicken broth and BBQ sauce. Stir in the smoked paprika and chili powder. Season with salt and pepper to taste.
6. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes to allow the flavors to meld together.
7. Serve hot with your favorite toppings.

My grandmother cared for her family during the Great Depression and I remember that she always ate soup often. They are so economical yet comforting. She lived to the age of 106.

@@homemadesimplewithlori as I recall she did not leave specific recipes. My best memories are of left over bite size pieces of pork roast (which is also the most economical roast) added in with corn, green beans, carrot, onion, celery, tomato, okra combined with a tasty broth. Small portions of a variety of vegetables is the trademark of a good vegetable soup. They enhance each other.
I love to make minestrone soup. In order to make the pasta not absorb the liquid as much its a good idea to make the pasta separately, under cook it for a few minutes, strain it and shock it cold.... then throw it in your soup last. My other favorite soups include ham and pea soup, chicken soup, cabbage soup and turkey soup

I love soup and making soup. Our favorites potato and ham soup, chicken noodle soup, poor man soup (hamburger veggie), minestrone is another. Another isn't really a soup but we eat a lot of chili during the winter.

We always cook pasta, rice etc. separate from the soup, just add them to bowl prior to serving the hot soup will warm up your filler. Prevents swelling in the rice and pasta

We do this, too. My husband is gluten free and it allows us to cook a small amount of gf pasta for him and regular pasta or dumplings for the rest of us.

I’m making chicken and dumplings today . I found a bag of cooked chicken in the freezer so I’m going to use it today . I like beans in my taco soup and it feeds more people. Sometimes I will add leftover rice. Just don’t add your pasta until the last thing . Maybe add chopped potatoes to the bbq chicken soup to make heartier and not as soupy. Great recipes and ideas . Why have I never thought of those cheese toasties!? We serve all kinds of rolls and garlic bread, etc with meals but I’ve never toasted bread with cheese slices right on them under the broiler. My kids are going to loooove that!

I use to love eating soups but I just recently aquired a dairy allergy thanks to a tick bite so its really hard to have soup and I have a nickle allergy so I can't have tomatoes in the can but I made vegetable beef soup the other day with just diced tomatoes not from a can, frozen vegetables, potatoes, celery, onion, stew beef, beef base and it was really good I also make chicken noodle sometimes. Sorry about the allergies!!! Those ticks are terrible!! We used to have them bad but the guineas have taken care of them!!! Hope you can recover!

My son developed a sudden dairy sensitivity after round up exposure. Raw milk helped him be able to do dairy again along with detoxing his body. I’m sorry you’re battling that. I hope it gets better soon!

Im the only one that likes soup in my house too. I make big pots full and i split them into containers and put them in the freezer. This way i have all kinds of different soups on different days... maybe that could help you too🥰
Chicken noodle/corn soup is my all time favorite soup. And like you said, this is the perfect time of year for it! Does Lane eat the soups too? I have a 3 year old who will refuse to eat anytime we have soups, so I was wondering if you have any tips for me.
Lane hates supper time 🤦♀️🤦♀️🤦♀️. He cries everytime I say it’s time for supper! I have zero tips. We are in this together ❤️❤️
My oldest ate soup right out the gate! My youngest, exact opposite, natch. I started by giving him the solids instead, and I daresay maybe even separate them out if you've got to! Small dices of cooked carrot, potato, ham, things like that. Eventually he got old enough to where I was able to explain that everyone else was having the broth, and he should too.
Maybe allowing your little to help pick the items out at the grocer, help cut soft things with a plastic knife, help stir the soup (with supervision), or even choose a special bowl or mug or spoon to use might help. Best of luck! Lori's right - we're all in this together!
You ran out of sour cream! That is an emergency!😂 These soups look delicious. I like when multiple recipes use the same ingredients but taste different. It's a big money saver. I hope your immune system keeps you well.

Have you ever used barley in soup? I am looking to add some healthier grains into my cooking but don’t know where to start.
I actually tried to order some the other day for a Walmart order, but they couldn’t fill it. That was the first time I have tried to have that in the pantry but I am planning to find some good ways to use it!! I’ll keep you posted on that--I hope you’ll do the same for me!

A friend of mine has a blog called My Food Storage Cookbook and she's got a great explanation about barley (there are more processed and less processed kinds) in her Beef Barley Soup recipe, which we also enjoy.
