... I've had pitbulls for decades, I have one now. The few times they got into fights I experienced for myself the quiet, confident trait. In general they're well-known for not doing a whole lot of senseless barking.
... but those two particular dogs are definitely yappy, because their owners are encouraging it. Another trait pitbulls have is their eagerness to please.

That's pretty much standard dog behavior. Game dogs don't do a whole lot of annoying barking.
They do when they are facing one another and being held apart like they are in this video.
