We sang that at morning assembly too! At school In austria. I was searching for this song now because it was in my head maybe cause winter is coming soon:)
Thematically speaking it's more associated with Lammas or Mabon since it's a harvest song but Samhain is the very last of the harvest so I'm sure you could work it in. John Barleycorn represents the grain crop and all the stuff the people are doing to him represent harvesting grain and processing it into bread and beer. This would have all kicked off long before Samhain rolled around

I came across a query on the 'Mudcat' site from 2017 asking for information about the song. Usually such a post would get a good number of replies - but this one had no takers. Now there are very few English folk songs surviving from the 1500's so if this was from that time I would expect much more online traffic regarding it. And no 'Roud Folk Song Index' reference in the data base. Puzzling.
