Juan had the upper hand from the get go! The gameyness of the chicken may have been reduced by marinating the pieces in a mixture of lime juice, salt & a touch of tequila. Try it next time. Juan had my mouth watering when he was preparing the pico de gallo! YUM!!!

I've had that same chicken down in Uruguay but it was braised in a cream sauce with vegetables and it was probably one of the best chicken dishes I've ever had

rigor mortis is what causes the chicken to become tough to eat. It sets in within an hour with poultry after its been dispatched. Its better to let the meat cool over night and let the muscle relax before the meat becomes tender.

Mexican chickens are useally less tender lol but I think it's just us Americans are use to mass production chickens. Cause Mexican chicken is useally home grown organic chickens so I think that has something to with it being hard or chewy

Flair's sauce is known as thousand island dressing in Aus. Although as well as the Worcestershire sauce, you need to add a little lemon juice. Great on prawns (or shrimp, as you call them).
thousand island requires pickle. salad cubes/sweet(bread&butter) diced pickle is the titular ingredient as they are the islands (thousands, even) awash in the sea o' sauce
