@@creativeusername4912 yeah, best I could figure was it is a cut of meat from around the neck region. But I definitely know it's not a gizzard unless they have some hybrid cow chickens down there.

They probably gave them chicken gizzards and their guide for some reason said beef gizzards because that’s what it means in Spanish unless I missed something growing up. Just translating what the guy said but yeah only birds and fish have gizzards
There is different types of molleja some is gizzards chopped up from various animals and some is the thymus gland from the cows neck they call it sweetbreads in the United States has to be cooked for a long time or it's really chewy but it tastes good.
Those chile Serrano are delicious, we eat it in every plate, may you guys keep enjoying México 🇲🇽

So it is known as cow gizzards, and we know cows don't have gizzards. Is it actually a cut of meat from around the throat/neck region and it is just colloquial to refer to it as gizzards?
Shaxra59 yes it is a cut from the throat don’t know why it is called gizzards but that’s what it’s known as I’m from Texas and when you go to a meat market that’s how you would order it 🤷🏽♂️
