- In this video I compare the Aviation VS The Water Lily. They are 2 cocktails with creme de violette and are somewhat similar, but at the same time not. I would love to hear your thoughts on these two!
Aviation
1/4 oz (7.5ml) Simple syrup
1/4 oz (7.5ml) Creme de Violette
1/2 oz (15ml) Maraschino
3/4 (22.5ml) Lemon juice
2 oz (60ml) Gin
Water Lily
3/4 (22.5ml) Creme de Violette
3/4 (22.5ml) Orange Liqueur
3/4 (22.5ml) Lemon juice
3/4 (22.5ml) Gin

Another great one, Johan. I always dig the 2-drink episodes. Amazingly, I've never used Creme de Violette, this is really cool to see! I just had someone ask me for a purple/violet cocktail and now I can send them this one! Also, props on your closeup shots, they're always *so* clear and awesome, I dunno how yer doin it, but looks amazing.

Yeah, this or pretty much anything with Empress Gin will make a cocktail purple :)
The close ups? I just set the focus on whatever object is static and shoot, I don't use auto-focus. But sometimes I forget to set it too... 😆

The water lily is one of the first vintage cocktails I started to make for friends. But it’s pretty potent! I love both of these. I’m a gin lover, I make the water Lilly the same way. But, I always cough like that when I take the first sip as well, then after that….smooth sailin! Cheers,

IMO, the gin makes a huge difference in the Aviation. To my taste buds, the Violette and the botanicals in the gin can really clash. I like botanical gins, but I almost didn’t like the Aviation with Burnett’s gin but did like the cocktail with Beefeater’s which I feel is a blander gin.
I never had Burnett's. What kind of Gin is it?
Great video. As you know Aviation are my jam!! Going by colour is hard as some creme de violette are very light in colour. I prefer my Aviation's tart, dry and don't add the sugar for myself but I agree for friends I do and it help tame the soap flavour some people get from the liqueur. Though I do find leaving the syrup on the cherry can add a lot of sweetness near the end. The floral flavour not punchy but delicate and present in the aftertaste. Now to really confuse people use Empress 1908 and make a Sunrize Aviation (pinkish in colour). Now for the Water Lily I love it too, but one night I added egg white, wow it made it silky smooth and even more fancy to present (was using grand marnier as the orange liqueur).
I was thinking of doing the Empress, but I was afraid it would throw of my entire point with this video haha..but it's funny about the egg white in the WL, I got that order a few weeks back at the bar!

Made these both tonight. I think the aviation has more cherry notes than violet, while the water lily has a better balance. Both are fine for my taste, but I prefer the roundness of the water lily. Thanks for posting!

Ok, I’ve always preferred the Water Lily. But I just made your version of the Aviation and it is really nice. More sophisticated than the Water Lily, but no nasty aftertaste like an Aviation without some simple syrup. Thank you for this recipe!

I also like the corpse reviver 2, the lemon drop, and an occasional Negroni.
I guess I am mostly gin based but have also been experimenting with Mezcal, now that it’s colder weather. My favorite liquores are: green chartreuse, St Germain and Cointreau.

Great video, Johan! I just posted a video about the Aviation today. I got the idea to stir my from Anders Erickson, and that seems to help make it more purple. I was wondering what the heck else to do with a whole bottle of Creme de Violette, so I love the idea of doing a Water Lily cocktail. Also, I'm very impressed at the shaking 2 drinks at once.....that's beyond my level of coordination, lol!

Haha, thank you! Shaking 2 cocktails is a must when you're working in high volume cocktail bars. The biggest wow I get right now at the bar is when I stir 2 cocktails and shake 1. Took me a minute to learn that 😆

I saw that video and made the compromise prep: build the cocktail without violette but shake that, then add the violette and stir that in then strain. An extra step, but the best of both mixes.👍🏻

I think I would prefer the aviation. Too much creme de violette can taste flowery and soapy. Just a hint is delicious. Also, I think it would be really beautiful with Empress gin, as the purple colour would be intensified without adding too much violette liqueur.

I love the water lily, have not found a recipe for aviation that I like nearly as well. I think I don’t like maraschino.
Yeah, maraschino can be a little overpowering... Hence why I just use a little bit of it 🙂

I love the Aviation and I use your ratio of creme de violette. I don't like the cocktail to be too sweet or to get to that soapy taste that I have had with creme de violette. I am definitely going to try the Water Lily. It might be too sweet for my taste preferences but I am definitely going to go for it and try it. It looks gorgeous! Great video!! Cheers!
The WL might be a little sweet for you then, it does after all have more liqueur in it and less gin to dry it out. But if you can, it is always good to try of course :)

Actually use empress gin, kinda helps with the color without messing with the flavor so much, the empress gin has always kinda helped with it and the Cherry

I didn't have an orange liqueur, but I had a coconut rum.
So, I tried the Water Lilly with the substitute liqueur and it wasn't that bad... (I also substituted bottled Key west lemon juice, because I'm trash... But let's pretend I juiced it myself.)
The resulting cocktail color was grey with an undertone of gold. I was not expecting that happenstance.
Seems like it could be a good halloween cocktail.

Have you tried an Aviation with Crème Yvette instead of R&W Creme De Violette? I find it to be a better flavor, and there's no "soapy" taste.

Not that I can recall...maybe at some job at some point, because I do recall working with Creme Yvette at Park Hyatt in NYC (at least I think that's where it was). But I haven't had it in a while either way. Next time I need violette I'll try to get a hold of the Yvette instead, you really got me curious now lol!

I had an Aviation at a restaurant that I went to for my birthday, and it was tart and delicious. I bought all the ingredients to make it at home, and when I tried it, the maraschino almost made me gag - it was far more pronounced in the home version, and it reminded me of the smell of beeswax, which makes me a lil sick. I have no idea what was different between the two drinks, but I feel like I should give the Water Lily a go.
How did you make it at home? Did you try my version? :)
Honestly, try a different gin, I found that can make a noticeable difference in the cocktail taste.
