    Daniel and Katie introduce another ("fail-proof") Korean dish called Spicy Korean Cucumber Salad. Spicy Korean Cucumber Salad (pronouced ‘oh-e-moo-chim’) is the perfect beginner’s recipe to Korean cooking. It requires little prep work and uses common pantry sauces. The cucumbers have a slightly spicy yet tangy kick, which helps refresh the palate after eating something greasy or meaty. In Seoul, we see this often in restaurants (often BBQ joints) as a complementary side-dish. Lately, we have been eating these cucumbers at home with a bowl of hot sticky rice. It tastes amazing! Even better, this recipe is both vegetarian and vegan friendly.

    You guys probably don’t look back at older videos comments, but I’ve been wanting to make these for a while! So I decided to make them yesterday and keep them in the fridge until today :) my boyfriend was expecting this banchan to be good, but when he tried it he was so shocked. He said it was absolutely delicious. Up to his grandmother’s level. His mother doesn’t cook very well and he even told me to show her how to make these since she always makes them too sweet. This is the 4th recipe from you guys that I’ve done, and it always comes out AMAZING. It really brought back memories for him from when he use to live in Korea with his grandparents. Please never stop making amazing recipes! Thanks again~

      What type of vinegar did you us, and can we use alternatives? Like red pepper flakes(I don't have Korean chill powder).

    I’ve tried several recipes of cucumber kimchi from TH-cam and this is my favorite so far. I did the taste test like Daniel after mixing the sauce and had the same reaction as him in the video. It’s was much better than I expected.

    I've just tried this and it's SO SO SOOO good, it's very flavourful. I recommend cutting it into larger pieces (into sticks), so it will retain its crunchiness and I didn't have white vinegar so I used apple cider vinegar which turned out well as well. Thank you for the recipe :)

    Oh my goddess this recipe is absolutely amazing! I made them yesterday and can’t stop eating them. I love making pickles but hate usually waiting days or weeks for them. I did find cutting the cucumber a little thinner better and storing them in an airtight tub I could shake like made (to kind of bash them up) made them extra delicious. Thank you!!! X

    I tried this and OMG it tastes so good. I thought 2 spoons of vinegar was enough but it srsly lacked of flavor so I just really followed your instructions precisely and it was amazing. Thank you so much! More simple banchan recipes pls

    This was so good! I always end up buying this from the store because it's one of my favorites, and I never tried making it before because I thought it would be hard/take a long time to make like regular kimchi is, but it was so easy and delicious too!

    Thank you for the awesome recipe! I make it every week. It’s a non boring way to eat vegetables! Tip: I decrease the chili pepper flakes to 1 tablespoon.

    I just found your channel looking up cucumber kimchi. When we lived in Korea, we called cucumber kimchi ‘Summer Kimchi’. I think I may almost- almost love it as much, if not more, than the traditional cabbage (or Winter) kimchi.
    Here’s another Korean myth:
    It is bad luck to say the work ‘monkey’. To safely say it, you have to wait for a full moon and hang from a tree limb upside down while saying it.😂

    Yep I know I'm super late to the party but wanted to say thanks for the recipe. I've been making korean cucumbers for YEARS and never salted nor used garlic or sesame oil. I did however not have any sugar available, alas these were the best I've ever made.

    I used to ignore this stuff at the KATUSA snack bar for like 2 years of my 3 years in Korea.Then I realized THIS STUFF IS AWESOME. Oh man, I wasted so much time (and money!) getting other things. Well, at least I had some bomb budaechigae in Seoul for that year...so much. So good.
