By the back you mean the side without the opening I assume. So having made one of these myself I know that the back has a disk of contrasting wood about the same size and type as the one you make to cover the opening that was used for hollowing. Create a inset and then make a disk similar to the one used to cover the opening. Glue it in place.
It has been a while since that demo. I believe we held the item by expanding a scroll chuck in the opening to the recess and turned off the tenon on the opposite side to leave a slight recess for holding a disk similar to the one that will be used to seal the recess opening.
