The aroma was intoxicating. Years later, I had the chance to go to France for work opportunities. In Paris and Annecy, I lived close to a small boulangerie. The aroma alone made me happy. Those times were heaven for me.
According to a study from 2017, gluten isn't the allergen that causes intolerance to people (except people with an IBD) but fructans -> these are almost always together with gluten and that's why people think the gluten is the thing that harms them, but the real sinner is fructans.
rice is good, but bread? can be a roll, a brioche, a pastry, a baguette, tortilla, flatbread, paratha, rye bread, bagel, pita, focaccia, ciabatta, sourdough, pumpernickel, mantou, naan, challah, pretzel bread, roti etc. bread reigns supreme.
