This is a great dish and a wonderful recipe. Historically, cod is one of the most important foods in world history. After the great plague, there was an insufficient number of farmers in Europe and people were desperately searching for sources of food. Spain and Portugal looked to the sea to their west and discovered cod were plentiful and could be preserved for a long time with salt (creating bacalao). This discovery together with the discovery of more precise navigational tools resulted in ships traveling farther and farther and led to the Age of Exploration and the (re)discovery of America and the wealth it held, new foods such as tomatoes and sugar, and herbs and spices (chiles from the Americas and black pepper by sailing around Africa to India). Better nutrition led to a repopulation of Europe directly resulting in the Renaissance. Eating cod brings us closer to history. In Israel we just put the fresh fish on top of the sauce and cover it with a lid and steam it for about 15-20 minutes. If you bake it it will get dry. The ingredients are exactly the same.
Steamed is excellent. But. I still prefer baked because it does add a little bit of texture. All being said, this is just a classically awesome dish. Most definite with the toasted baguette!

Before, salted cod in Spain was poor people's food, which is why here we have so many popular recipes, which are always better than the very sophisticated ones. For me, salted cod far surpasses fresh cod, but it must be desalted correctly, if it is too salty it is inedible and if it is desalted in excess it tastes like nothing. Today in Spain the salted cod on the fishing boat, which acquires a wonderful color golden, it is a gourmet product, very expensive. The times change....

I've cooked this for years, but have always known it as Portuguese cod (after first eating in in Lisbon in the 90s) 🤣😂
