HI..... I measured the milk and cream with my container from my ice cream maker. The container is 1.5 quarts but I measured a little more than have that container. I did not want the mixture to pass the mixture paddle. This gave me 3 1/4 cups. With all that said this is what I used. 1. Half Of "Fairlife Whole Milk" 2. Half Of "Homemade Oat Milk" 3. 3 Organic Eggs (Including Egg Whites) 4. 8 oz. Organic Coconut Cream 5. Half Cup Of Light Brown Sugar. 6. Half of Vanilla Pod 7. Handful of Ghriardelli Semi Sweet Chocolate Chips 8. One Quarter Cup to One Third Cup of Hershey's 100% Cocoa Powder (Shifted) I maybe leaving out something but on that note my end product looked icy but states great, and not too sweet. What did I do wrong that has that Icy look to it. Please help for my future attempt? Thank You
since you have less fat in that recipe, you probably need more stabilizer, i.e. eggs, corn starch, or dry milk powder. Also let it set out from the freezer for 10 min before serving that may help.
Looks magnificent however authentic gelato isn't made with cream. Authentic gelato is really just eggs, milk and sugar. Once you add cream it becomes regular ice cream.
Actually, it's not made with eggs either. No cream, no eggs. Traditional thickener is made with cornstarch. That way you don't taste the eggs and the flavor is more clean and light.

You need the fat from the heavy cream. Try using some xanthan gum or neutral alcohol. Making ice cream is learning lol
