In this video I will show you how to make a wonderful moist German potato bread. This bread tastes great and will keep fresh & soft for a whole week without any artificial ingredients.

    I made this on a Saturday night, and my roommates and I ate the whole loaf within an hour. Absolutely would recommend, one of the best bread recipes I've made to date.

    I have a tip, you can use the water from the boiled potatoes to add rather than just plain water. I saw this once done by a German town baker on TV.

    Ingredients
    8 cups flour plus up to 4 cups
    1 tbsp. instant yeast
    2 tsp. sugar
    2 tbsp. salt
    3 cups warm water
    2 eggs
    1- pound starchy potatoes- 455 grams
    Instructions
    Add flour, yeast, and sugar to a bowl and blend briefly.
    Add warm water and knead for about 10 min.
    Cover with a clean kitchen towel and allow to rise for about 20 min.
    In the meantime, cook the potatoes.
    Rice the potatoes and add them with salt and the eggs to the dough.
    Knead the dough for about 10 min.
    Depending on the potatoes add gradually up to 4 more cups flour. The dough should still be soft.
    Cover and let rise for about 1 hour.
    In the meantime, preheat the oven to 400 F and place a large heatproof bowl or pan with water in the oven.
    Add the dough to a floured working area.
    The dough will be pretty sticky. Flour well and tuck ends of the dough under to round it.
    Sprinkle the bread lightly and slash with a sharp knife.
    Bake at 400 F in a preheated oven for 40 to 60 min.

    I can’t wait to bake this loaf! Anyone have tips if I use a Dutch oven to bake the bread in ?

      Thank you for watching and giving this recipe a try. If you want to use a Dutch oven just make sure that the dough will fill the base of the pot most of the way. If your pot is too small, you should half the recipe or just bake two badges after each other. Plus I would make the dough a little more "wet". Add about 1/4 cup more water. Start preheating your pot roughly 30 minutes before your rising dough is ready to bake. Apply a gentle coating of vegetable oil-based non-stick spray and sprinkle in some semolina flour or cornmeal. (Be careful during this step - the pot may smoke slightly when prepared.) Dont forget to make some slashes on top of the bread. Bake for 25 to 30 minutes; remove the lid and bake for another 5 to 10 minutes, until the loaf browns fully. If you have any other questions, I am always happy to answer them.

      Hi Patrick, wenn du kein Ei verwenden magst, dann nimm pro Ei einfach einen Esslöffel fein gemahlene Leinsamen eingeweicht in 3 EL Wasser. 5 Minuten quellen lassen und dann an Stelle der Eier hinzufügen. Es gibt einen leicht nussigen Geschmack zum Brot, aber ich finde das passt super und ist sehr lecker.

      Heute werden Kartoffeln, gerösteter Knoblauch und Rosmarinbrot hergestellt. So gut! Kein Ei, kein Öl. In 5 Monaten 32 kg verloren und dabei die Athlerosklerose eliminiert.
