When I was a kid, here in Iceland, we used to get a cup or bowl with a little bit of sugar, "dip" the rhubarb in it and then take a bite. The end would get a thin coating of sugar that balanced out the tartness
Make a chunky rhubarb sauce(think chunky applesauce) then make Rhubarb Shortcake exactly like Strawberry shortcake. That is a favorite in my family for generations.

My amazing neighbor gives us rhubarb every year. She said she freezes it (pre cut in 1/2" pieces and pre portioned) and puts it in her smoothies. I haven't looked it up but she said it has some good nutrients in there. My hubby make a delicious strawberry, rhubarb pie. 🤗 Way to go with dash surfing! You did it like a boss!💪! Soooo for rhubarb I used to make rhubarb crisp a lot and freeze it, then last year I found the most amazing jam recipe that my family loves and I give as gifts at Christmas. It’s a MOCK strawberry jam. Made years ago when old timers didn’t have access to fresh strawberries due to price and availability and so instead of certo you use strawberry jello and honestly this jam tastes BETTER then typical strawberry jam in our opinion. And rhubarb is such a healthy spring tonic as well! So win win 🎉

The Wild Scoops ice cream shop in Anchorage asks for rhubarb during summer. It’s only for a few days but I believe anyone who brings in rhubarb gets a coupon. Maybe Fairbanks or North Pole has a local place that could use rhubarb? Might be something to keep in mind for next year. I’m not ready for winter in Anchorage. My apartment complex has already put the buckets of ice melt out. I want the snow to stay in the mountains.
Our winterizing in southwest 113 degrees this week. We take hoses up in Nov. Cover our stickers yes it does get to below freezing 29_degrees but no long we get a snow fall once and by 3 p.m. its gone. In 1986 we got 2 fee of snow. We did live in Missouri when it got minus 45 derees
