For cooking onions the quantity of oil should be more otherwise the onions tend to char and turn black. I know one lady who uses half tspn of oil or less and half cup water to sautee fry onions. I never eat at her house.
Yes the brass one is traditional. We had all these at mom's place too. We also had a special clay dando kundo, wide with rough surface like sand paper for making thadal / Thandai. As kids we used to take turns to ghote the thadal as it takes a very long time.

Yes, you are right. And also in the steel pressure cookers things tend to get burnt if we use less oil.
