My mother’s method with saibhaji was to fry just onions and garlic, and simply add all the veggies and kachha masala, all to be cooked and mashed. I’ll try your method. My mother used to add some dried methi and of course a potato too.

Bahut hi aascharya ki baat hai.. ye sai bhaji naam pehli baar suna..sindhi khna me sirf daal pakwan suna hai. aur kuch maloom nahi hai. But anjaane me hi ye sai bhaji maine plain rice ke satb just daal jaisa soch ke banaya..kayonki pass me kuch sabji nahi thi...palak aur chana daal avilable the us samay. Bihar se belong karti hoo...but bahut khusi hui anjane me hi sindhi bhaji bana li...😊😊😊💓💓💓💓
