I do talk quickly! Trying to get everything in there before people run away from boredom. So I watched it like 30 times and paused and Googled, and I came up with nothing. I don't remember that specific wine. I think it might have been a gift from my Italian contractor. Any pinot or chianti will do! I have made this same sauce with white wine and that is also good.

New here to the channel, you are fun to watch.This question might sound stupid but can I add maybe grape juice or grape jelly instead of wine.I forgot the wine earlier today and I have already started making this,thank you!
Happy to have you here! That isn't a stupid question at all. I would err on the side of omitting the wine because grape juice and jelly will be a bit too sweet. The wine adds a nice layer of flavor, but the pasta sauce is still amazing without it!

You can't use tomato paste instead of the tomatoes because tomato paste is a cooked, concentrated paste of tomato puree. It will be intense and also missing all the delightful bits of tomato! You can use canned chopped tomatoes.
Did you know? When growing your own tomatoes, you can put a tablespoon of sugar on the roots, when planting in the ground. Tomatoes will be sweet & not acidic! Leave a couple plants without sugar to compare. Once you taste the difference, you'll do it again & again. Great maters for any sauce!
I always have a bad onion day haha. I don’t know why but I suck at cutting onions. I understand the concept but always wind up doing that chopping thing you did at the end lol
Your love for cooking is lovely, but your hygiene is repulsive, tasting and dipping the spoon again, is so off-putting. You are instructing people on how to cook, please make a good example how to do it safely without introducing bacteria from your saliva.
😂 Honestly, I'm cooking for myself and my family. Calm down. Also, tasting your food is important. If it makes you feel "more hygienic" then feel free to use a clean spoon every time you taste like we do in a professional kitchen. My kitchen, my rules.

I feel you and I prefer a different brand that is actually from Italy, however, they are double (sometimes triple) the price of the Amazon Fresh brand. It really does make a difference in the final product but NYC food cost is out of control! I have to run a business and make food to feed my family. I am sure you understand that sometimes corners must be cut. I will tell you that this recipe with real San marzano tomatoes is bomb.

You can use as much as you want :-) It will just change the time to reduce. Also note the size of the batches I was making.

I’ve never made homemade sauce with chicken stock. I guess I’ll give it a try. I only use broth‘s when I’m making stew.

Absolutely! I usually sear my meatballs first in a pan and then add them to the sauce. It will add a lovely richness to the sauce.

Your sauce is very similar to mine, I usually add tablespoon of pepper flakes and use vegetable stock, I'm gonna try chicken!

Unfortunately those are San merican tomatoes which are are overpriced fake San marzanos that taste weird
