Greek stuffed vegetables - Gemista! I just love it!

RECIPE:
Ingredients
3 onions
1/2 bunch of parsley
3 tomatoes
250 g of mushrooms
15 peppers
500 g Carolina rice
Salt Pepper
Anise
Olive oil
Vine leaves
Water
Method
Put the onions, parsley and mint in the food processor and grind them.
Then add the crumb from the tomatoes and mash it.
Clean and cut the mushrooms into pieces.
Clean the peppers from the seeds.
Mix the rice with the onions, mushrooms, salt, pepper, dill and olive oil.
Stuff the tomatoes and peppers with the mixture.
With the rest of the mixture we make dumplings.
Place the stuffed ones in a baking tray.
Cover the dolmades from above and below with vine leaves.
Sprinkle them with olive oil, salt and pour enough water.
