Spending a Day Back in My Old Kitchen. Can I handle the heat?

  • It’s been a while since I’ve worked a service in a busy kitchen. Last weekend, I went back to my old stomping ground at ST. ALi in Melbourne, Australia to see how long I could last back on the pass. Thanks to the everyone at ST. ALi for letting me get in the way during a hectic weekend breakfast shift. Cheers to the baristas who kept me caffeinated.

    Love longer format videos! The longer the better of showing restaurant cooking. To many channels do home food. Not enough channels doing restaurant style food!! Love your channel!

      hey chef,wanted to know is the life of a chef terrible?Like long hours,no vacation minimum wage?Will i have the same fun cooking in restaurant as i have in home?

      @@ko-kf2nu Hey usually the chef life is really hard because as you mentioned before you will sacrifice mostly all of your free time 14-16hours shifts. I am coming from michelin restaurant backgrounds currently working in 3*** establishment and far from being chef . But if you are passionate enough and ready to sacrifice everything else for it then do it. Other than that it’s tough work with poorly paid labour unless you reach highest ranks like : Chef/Chef patron (owner.)

      @@VantaBlackShorts agree. I was a cook and my son is a chef. If my son asked me for advice I would've told him to be a hairdresser instead. If you're young and single it's all good but if you have a partner and young child it's hard. The pay isn't great but at the end of the day, you know how to cook to feed yourself, family and friends 😋

      @@marilynschmidt6400 Agreed. As a single guy I cooked and cheffed for 25 years but got married later in life, had two boys and the chef life was not conducive to Family responsibilities. It did not work together, so here I am at 45 re-educating myself for the next 25 years. If my kids tell me that they want to chef, my advice also we be hell no. I taught you how to cook like a boss, now go get a job that will provide the time & consistency for your mate & family.

    As a former chef, I kind of miss the rush of service, 26 years in the industry was good enough for me. Now I enjoy cooking for the most ruthless critics, my two young daughters 😅 covid lockdowns was the short-circuit I needed to get off that merry-go-round. I realised i missed out on alot of my family time especially when my girls were young. I'm now able to explore baking sourdough, making puff pastry, pies 🥧 And just plain experimenting.     I have to say, even though im out of the kitchen these days, i still miss that rush of service, i mean, i dont miss it so much to ever go back, but its nice to watch a video or three of chefs doing their thing, its truely unique to work at speed but with intention and perfection.

    love the longer videos and also love seeing pro cooks at the pass. such an insanely hard profession, as a humble home cook i'd probably be wheezing or dead by the end of a service. amazing work chef!

    I really like your videos because I can really see the tremendous amount of work you have done all these years and what really means being a cook. No holidays, extreme hard work, pressure all the time. I'm sincerely in awe. So much for those wannabe youtube chefs cooking from mother's basement.     Love it Chef. I’m with you brother. At my age I would not be able to keep up, been off the line for way too long 😩. I do miss it though. But in my day I was unstoppable and fast lol. At 62 I have definitely slowed down 😥.

    i used to run the breakfast line in a busy steak house type restaurant, Sunday morning we had a line up out the front door from 9 am when church let out until i got off shift at 3 .. back then i had a 9 burner stove top 1 had poaching water going and the other 8 did omelets. 2 other cooks were on shift. 1 on grill doing potatoes, meats, pancakes and the other did breads and was the gopher covering anywhere needed. I retired 15 years ago now and am happy I an manage to make 1 omelets at a time.. I dont know how the heck I ever managed 8 at a time while also juggling poached eggs, calling orders and plating but somehow I did . .. It's intimidating going back online after being out for a while... much respect Andy..

      @@ko-kf2nu it can be long hours but depends where you work. In New Zealand and Australia there is huge demand so we can get more money. I love it, i was a banker earning huge money but i was miserable. So i would rather have less money but enjoy what i do

    I used to live in South Melbourne and without a doubt St Ali was and probably still is one of the best cafe's in Melbourne
