Hi Mindy, when I make corn chowder and use fresh corn cut off the cob, I’ll add the cobs to the soup to add more corn flavor and remove before serving.
You can put a kitchen towel under a wobbly cutting board to make it stable. I had one that was warped from being to close to the stove, before I found them at the dollar tree.
I have never seen quesadillas made that way. I have made them for years, in the traditional way. The quadrant idea is interesting. Just be careful to not overfill or folding will be difficult. I’m going to have to try this method next time.
A family member travels for work, we’ve stayed in many places. I try to bring staple spices in a pill container (when traveling by car) or make arrangements at a close-by large chain store for a grocery pickup upon arrival, including a few foil pans and paper plates just in case
I make a really great potato chowder kinda similar to that! Onion sautéed in butter, 2 10 oz cans of cream of potato soup, one 14 oz can of creamed corn, 2 of the potato cans filled with milk, a can of rotel, half a block of cream cheese, and salt and pepper!! It’s also good with shrimp in it or leftover crawfish tails from a crawfish boil!
That looks like the timeshare I own! One thing I do when I fly is to bring spices in tic-tac containers or one of those daily pill dispensers. We used to get spices beyond salt and pepper pre-COVID, but they would never have cinnamon or curry powder or Chile powder.
Pre COVID I traveled for work and some hotels would have those tiny salt and pepper shakers. And sometimes tiny Tabasco bottles! I love anything tiny like that! 🥰
I made an apple pie and instead of the top crust I used the cinnamon roll and icing, it was very good but so sweet only a very small piece was more than enough!
Our go-to vacation rental meals are taco soup, pasta, and lentil soup if they have a couple of larger pots. Sheet pan meals are some type of fish/chicken + veggie or sheet-pan fajitas!
Nice job! And with not much to choose from, you did great! I wonder if the dessert could be tweeked to be more to your liking? Oh well, it was an experiment and went over well. I hope you and your lovely family had a great vacation!
Woohoo! You got to experience where I live! Yes, prices are higher here where I live versus where you live, even in the cities where we have options for shopping! Hope you enjoyed your stay in our beautiful state!
Yayyyy on the wine opener, lol. We've done a lot of time-share condo vacationing and trying to cook is def a challenge with the limited pots/pans/utensils. I can only imagine trying to cook for 15 people!
Thx for this video. I would love to see more videos on preparing meals for a larger group of people. In my family we have various dietary restrictions and that makes it so difficult to find something for everyone at each meal! I'd appreciate any ideas you have to offer! 😊
I think the dessert might be a little more interesting if you pressed the cinnamon roll dough into muffin tins and put the filling inside. I personally think would par-cook the dough and use cherry pie filling instead of apple. Then you can top with the icing. What you did made more sense with a group, but for just at home, and with ingredients you find on sale/much cheaper, maybe you would like it more!
I have everything I need to make the apple dessert... I'm definitely going to try that! Really easy to make it vegan too with vegan ice cream and dairy-free cinnamon rolls (the Annie's brand is my favorite).
I live in a very rural area and the cost of living as far as homes is crazy cheap. I have a nice home on 2 acres and I paid $69,000 for it. The cost of food is ridiculously high though.
I have a corn chowder recipe I’ve made for years that I think maybe we’ve grown a little tired of … so I liked the look of yours…the rotel sounds like a yummy addition. Also serving it with quesadillas is a great idea. Thanks for all you do!!
Hahaha salt and pepper that size for 16 people. Someone should have gave you another set. Luckily you had someone bring bigger ones. I would have taken the small ones and made a momento maybe write the year.
YOU DO WHATCHA GOTTA DO WITH WHATCHA GOT ON HAND . OUR FAMILY'S GETTING READY TO GO ON VACATION IN A FEW MONTHS & WE'LL BE IN THE SAME SPOT YOU WERE . SO WE HAVE PLANNED TO TAKE ALMOST EVERYTHING WE NEED (WE'RE DRIVING NOT FLYING SO THAT HELPS) . STAY SAFE & GOD BLESS Y'ALL . (TAMMY FROM CALIFORNIA)
So excited that you got to spend time in Vermont!! Our Vermont BabyMoon got cancelled last year due to covid :( Also, do you have a PO box so we can send you letters? If not, have you thought about getting one?!

That is a great idea!
@Susan Clark I do the same thing!
Those cobs CAN be dried out and used in various ways. No more toilet paper shortage. Lol.

Wyndham has had those tiny salt and pepper shakers for years. I love them. They are usually enough for us for a week. Thanks for taking us along. ❤️
I get so excited when I get a notification for 2 TH-cam channels that I love....Frugal Fit Mom and See Mindy Mom...I just love watching you Mindy!
Wow, Terri, I’m flattered! 😊
Those are my two favorite youtubers too!!
I’m new to both these channels and I agree, they are awesome!

That’s a good idea, I hadn’t thought of that with the spices.

The tic-tac container idea is amazing! Thanks a lot for this tip!!
It's amazing that you were able to find Rotel that far north!
Funny you say that because I had the same thought! I remember my SiL telling me once she couldn't find it in her area in CA.

The food looked awesome! That would have been so stressful to me. Kudos to you Mindy!

I probably would’ve just done the ice cream for dessert. Maybe some cones for the kids. The food looked delicious!
Nice job! And with not much to choose from, you did great! I wonder if the dessert could be tweeked to be more to your liking? Oh well, it was an experiment and went over well. I hope you and your lovely family had a great vacation!
Nice, and smart. Soup always feeds a crowd, usually in the least expensive way. I cook for a smaller group but just as varied and picky. So I hear ya.
Woohoo! You got to experience where I live! Yes, prices are higher here where I live versus where you live, even in the cities where we have options for shopping! Hope you enjoyed your stay in our beautiful state!
I love 💕 the ideas thank you! The food looked delicious!!
I had to watch your video. I have the same floral top. 🤩 Thanks for your ideas. That apple dessert looks delicious.

Mindy you always make everything look great! Thanks for sharing your vacation with us!
Enjoyed the video! You could me make a feast out of next to nothing if you had to! Thanks again for your inspiration! God Bless!

Blueberry filling goes great with cinnamon rolls!!
I have never seen that trick with the tortillas. Great idea!

I would change up a peach pie filling instead of apple for the dessert....giving a summer flavor...still keep the ice cream.
I was thinking cherry pie filling but the peach idea sounds great too!
I adore you and your videos. Always informative and fun. Good video.

Did you have a fun vacation? Thanks for taking the time to make us a video!
Hi Mindy, everything looked so delicious. You are so creative. Enjoy your week :)
Thank you! I appreciate that!
Wow! You pulled it off well, Mindy! Blessings! Jackie in upstate NY
Do you have a recipe for the soup
I'm so happy to know I am not the only one who hates the biscuit can! My family makes fun of me, but I truly hate it!
Everything looks good, Mindy! Yum! 🤤
I find hitting the counter totally fine... the pressing the spoon at the seam like the directions say scares me every time!
I think your dessert is going to be Christmas morning breakfast this year! 😀
Those prices aren't really that high for new england sadly. Food is so expensive here!
Excellent!!!! Who was the great cameraman behind the phone?
That would be my dear husband. 😊
Great video! Everything looked SO good! Love your son’s Ranger cap - Go Rangers! 💙 ⚾️ ❤️

Seriously, is that enough food for that many people?
Kids eat very little in the summer. I'm sure there was plenty.
Considering she we was going vegetarian, I think it was enough.
Also noticed the kids plates had veggies on the side.
Since when did cheese become vegan?
Yay!!
Do you enjoy cooking
Yep!
You have a heated game of WHAT goin on? I must know, we love family game nights!🤣
Skyjo! Great card game, easy enough for kids and complicated enough to be interesting for adults!
