So, I decided to build on that and make a compilation of every single on screen appearance that Rachel has appeared in on the show. A couple of shots you may have to scan around to find her, but she is there.
If you want a full list of the Episodes she is in (and is shown here) in chronological order, then peruse this:
Season 1
"The Third": She can be seen in the hallway talking to Carrie.
"The End": She can be seen in the schoolyard.
"The Pressure": She is seen in the cafeteria.
"The Mystery": She is in the class album.
"The Party": Her first (and so far only) major role. She is the hostess of the party.
"The Genius": She appears briefly on one of the pop-up windows.
"The Ape": She appears in the cafeteria.
"The Curse": She is seen at Daisyland with her family.
Season 2
"The Internet": She appears again on one of the pop-up windows.
Season 5
"The Matchmaker": She is seen kissing Darwin in a flashback from "The Party."
As you can see, she hasn't showed up much at all. Mostly she appears in the background, in repeated animation and shots. Ah well, thought I'd better be completely thorough.
Also, I figured this would work as some great reference material of someone wanting to use her character for a YTP or something, and need all her appearances. And for that purpose, I hope it's useful.

Tucker Hawkey no, the writers didn’t like her so they completely scrapped her from the show and her family pretty much forgot she ever existed. That was like the one and only episode we saw her in.

My guess is that they thought there were WAY too many characters to keep track of, so they scrapped her to make things less jumbled.

I've heard that the reason why Rachel disappeared in the show is because she went to college (I think this was pointed out in Darwin's Yearbook). I think the creators, however, just didn't like her, so they got rid of her.

According to Tobias in Darwin's Scrapbook, he mentioned that Rachel has gone to college when Darwin asked him where she is now before getting a photo of Clayton from him. That's why Rachel's never seen in the latest episodes. I don't know if Darwin's Scrapbook is canonically a part of TAWOG, but it might answer your questions.

So after the creators "deleted" her from the show everyone forgot about her and some how some way only Darwin remembers her. "But why would Tobias say she went to college" well let's just say that the creators wrote his character to say that to trow Darwin off track from finding out the truth.

Something I learned about her was that the reason she was dropped was because the creators didn’t really like her character so they just stopped having her included. She made small appearances but they were just for like 2 seconds.

I actually thought she wasn't a bad character, could've added a different perspective her being older and all (she would've especially fit into the episode "The Others", as that's specifically about the older classmates in Gumball's school). TBH, I'm not even saying she should've ended up with Darwin in future episodes, but she shouldn't have disappeared off the face of the planet like she did.
It's honestly sad that the crew slowly involved Rachel less, she's even more forgotten then Molly. She probably only had a main role in atleast 1, or MAYBE 2 episodes. Other than that she just became a background character. It's cool she still has her own story though, she's off to college. So that's cool.
There’s a Gumball movie on the way, maybe Rachel will make a cameo appearance.
