Holy cow! Paul thinks Chili con Carne is Mexican. In "Bowl of Red" Frank Tolbert covers the history of this exquisite dish, and it's from San Antonio! And it is "Chili" with one "L", not two. The meat should be "Chili grind", which is a larger grind, and the flavor has to start with kidney suet. It's admirable that Chili is so appreciated but it looks like Chili recipes are like the child's game of "telephone." You never know what's gonna come out at the end.
