At the end Siyeon was telling Jiu to tone down the Dreamcatcher and add a spoonful of Minx lol.

Siyeon joking about minx is a huge deal because she ended up in a very bad place mentally after their initial disbandment and felt like her career was over. She later elaborated that she hated minx because it was not even remotely the kind of music she wanted to make. Jiu talked about feeling like she had failed the rest of the girls as a leader when they initially found out the group was a failure and Dami has talked about hating how she had to act and sound like a completely different person. Sua also still hates cutting her hair because they gave her an unfortunate mushroom bob back then. It took them till their first win with maison to fully get over the trauma and they later peformer an ot7 version of love shake for their 7th anniversary concert.
As for how you should go about it. I recommend checking out live performance alongside the studio versions because I wholeheartedly believe that they sound leagues better live. The order is up to you. Some people prefer sequence but if you're not really invested in the kind of convoluted lore for each arc its not needed. The most you'll get out of it is to see where they came from. For example, older styling and makeup was a bit...not great for their features, the line disribution in some of their early music is kind of bad. I also think watching the older music with newer live performances is more fun cause you can hear the change in their voices, eg Dami, Gahyun, Sua and Siyeon sound dramatically different, particularly Dami who has gotten more confident and Siyeon who's voice got a lot deeper with age. Handong also got vocal and choreo parts in almost all of their dystopia era songs she was absent during. For example, there are ot7 versions from their utopia/dystopia concert for most of the dystopia era songs but make it acapella. Red sun has a rearranged instrumental that is more gothic for a live performance they did with a vampire concept. Deja vu's new live version is acapella in the first half, bon voyage live version now has a break before the final chorus where the fans chant with them and Siyeon belts higher and higher before her big note. Its all very fun.

Definitely starting from the beginning with their discography is best

Starting at the beginning is best for following stories and seeing their evolution. Be sure to always include their album intros.

I’d recommend going in order and going from there.
HOWEVER, start with MinX. Atleast “Why Did You Come to My Home” and “Love Shake”. It’s their origins and will be a shock
