Ok, so it's currently March 2020, and as we all should know by now, the world is facing a global emergency the likes my generation have never seen before. Our normal way of life has been turned upside down in order to save ourselves. This play list has been created to help you guys with recipes using kitchen cupboard staples, recipes where you can swap out ingredients and also quick 1-2 minute videos like this one to help make your life easier around the kitchen.
In this video I'll show you a quick and easy way to preserve fresh herbs by freezing them. freezing fresh herbs is a great way to keep them for longer, and means you don't lose all that fresh flavour. This will work for any leafy herb like parsley, tarragon, mint, basil, coriander, chives etc etc. The same method can be used to freeze fresh garlic and ginger. Simple grate the garlic garlic and ginger into a paste and follow the same steps. Freezing herbs is a neat little tick right now, especially when certain ingredients are sparse.
All you need to freeze fresh herbs is a few ice cube trays, room in the freezer and a bit of time. Remember folks, stay safe, stay home and look out for each other.

Thank you for the mind-blowing tip!! I've avoided fresh herbs because I hated wasting them. But with this brilliant idea, I can use what I need when I need it. Thank you so much!

That's a very good tip. I buy fresh herbs now and then and generally throw half of them away.

I like the idea, mate, but, because I have a "frost-free" freezer, I would need to find some way of covering the ice cube trays to stop the water from evaporating before it has a chance to freeze. ☹️
I know that specially-designed covered ice cube trays are available on eBay and Amazon - at quite a price! 🤬
BTW, I don't know if you follow Chef John at Food Wishes, but I seem to remember that way back in the dim, distant past, he published a couple of videos, one for freezing home-made demi-glace, and another for freezing the herbs in oil instead of water. I'll try to find them, and if I have any success, I'll come back here and add the links to this comment. 🙂

How long do the frozen herbs last in the freezer?

Yes you can do that too, just mix in a little oil into the chopped herbs and remove as much excess air as possible before freezing.

    • @Adam_Garratt

You're better to dry out woody herbs like thyme, rosemary etc. There's techniques online to do this. Normally in a very low oven to dry out.

Interesting! I always thought you should blanche and shock the herbs before putting them in the cube trays ostensibly to retain the green colour, but if you are going to be cooking with them it doesn't really matter. Thanks for the demo, Adam!

Good on you mate, I'm using your method for many, many years because I got a nice orchard with lots of citrus, fruit and plenty of herbs, all kind of herbs. These herbs are growing like weed at my place and I chop and freeze them to secure our supply all year long. Some herbs can only be harvested at certain times, others all year long in Perth. But I never, ever use a food processor to chop my herbs. I tried it once and the taste changed to a bitter taste.
Keep up your excellent work bud and stay safe J
