Why? Simply because it is too easy to win with Is/Seb and some challenges would make it more fun specially for a game mode that already became so boring for those players like you who already have 15+ heroes at red2.

I use a magic team on defense with no problems; in fact my current Arena defense has both Aurora/Celeste on it and I'm sitting in 7th place with 9 successful defenses. I was #1 rank for over 10 hours before someone got me. Current team is Aurora/Celeste/Arachne/Polaris/Issac (khorus pet). I do switch it up from every so often, but I have no issues with defense 90% of the time. It got even better with the Frost Flag because it reduces both Isaac and Sebastian's skill, and allows my control hero's to pretty much turn the fight in my favor. So I would say it depends on the server, which kinds of teams you can use without too much issues.

So you take Cain off Aurora or you take the tank flag off her (to slow her ult). By the time Aurora gets going, Celeste is no longer doing damage because she's in healing mode and Arachne/Polaris starts doing work chewing through Sebastian's Ode to Serenity. Isaac eventually gets stunned or frozen. Polaris is already a soft counter to Isaac when her skill Northern Lights is active. Frost flag makes it even better.
is it? I keep getting smashed by polaris/nebula/amira or polaris/nebula/arachne. and they often use augustus too -orion with augustus doesn't hit anywhere as hard as this
either amira oneshots me or augustus pure dmg + a control hero breaks through my Isaac (I use classic Lol Osh team against magic). I can't see a way around it -oh yeah and Iris is sometimes a swap for augustus

No, Isaac and Heidi hard counters Aurora. Heidi is a problem but that's a completely different team than what I'm showing here. Aurora/Isaac is strictly worse in most situations (like all of these fights), but it's still a high win rate because of the Isaac/Sebastian.

It's something you have said a lot, but how Asta/Axel is a counter to Iris ? How Axel could be better than Oliver for exemple ? Axel provides magic attack (useless for Asta) and armor, protects against oneshot (Iris won't oneshot). Oliver provides also armor but health instead of magic attack and heals Asta when his health is low. I really don't see the benefits of Axel.
Astaroth's shield is one of the worst ults in the game. It's combined damage, and only physical. It's worth about 1 or 2 basic auto attacks. Axel prevents one-shots from Dante from happening, causing Iris overall to be slow as cold syrup.

imo defense is completely irrelevant these days there are like 3 teams that are relevant and can defeat each other, besides that other teams are a hot bag of irrelevant shit so dont give 2 shits about defense, put in 5 good heroes or 5 healers they are fucked anyways. issac, nebula and Sebastian are a must tho no debate about them

I used the same 5 heroes to go from almost 100 to 1, that's why it was fun!

Isaac EATS aurora/celeste teams, they make it an auto lose no matter who else is behind them!

Amira teams are counted by any fast attack team; she's not countered by Isaac. Try swapping out the Heidi for Nebula to see good results!
